Winemaking on the edge of the vulcano

The Etna DOC unfolds across the slopes of the volcano like a crescent moon, with Randazzo to the north and Biancavilla to the south. It’s home to 133 Contrade, each a distinct subzone of historical importance.

Frank Cornelissen’s single-vineyard wines offer a window into the geological complexity of the northern Etna valley. Each cru, distinct in its character, is crafted from one of the exceptional vineyards that dot the landscape, vinified and bottled separately.

The diversity and quality of these wines are a testament to the unique terroir of this remarkable region—one that, in its depth and variety, rivals the world’s finest winegrowing areas.

Am Freitag, 26.6.26 kommt Emilio von Foradori für ein tolles Wine & Dine ins Restaurant La Chavallera. James Baron, Küchenchef, zaubert dazu ein tolles Menu, basiert auf alpinen Traditionen, aber mit einem modernen Twist.

Die ideale Gelegenheit für ein Wochenende in Graubünden.

Ein Blick nach Malans im Graubünden, hier stellen sich Astrid und Andrin Schifferli vor

Herzstück ihres Betriebes ist die Completerhalde der insgesamt 2Ha Rebflechen, die sie in Malans bewirtschaften. Hier entstehen filigrane Weine, welche durch die biodynamische Arbeitsweise ermöglicht werden. Etwa ein komplexer Pinot Noir aus der Completerhalde erstmals 1321 urkundlich erwähnt und natürlich der wunderbare Completer🫰🍷

Bei Gramona werden auch Pferde im Rebberg eingesetzt. Pferde verursachen weniger Bodenverdichtung und es werden auch keine fossilen Kraftstoffe eingesetzt.
Gerade bei den jetzigen Dieselpreisen eine Überlegung wert.

Roc und Leo führen die biodynamische Philosophie ihrer Vätern weiter.

Behind the scenes today with Dominik Huber on the topic of greening.

The Priorat in particular is a prime example of how viticulture - including greenery - and a modern understanding of terroir influence each other.

And it’s definitely worth a visit, the Mediterranean terroir with its hillsides and Lilcorella slate soils produces excellent top wines - the ’22vintages „Les Manyes“ and „Les Tosses“ were each awarded 98 Robert Parker points 🫰🍷

In the vineyard, the story of a wine begins long before harvest - it begins in the fragile promise of a bud that opens to light, air and the slow unfolding of seasons.

That tiny bud becomes a berry, a layered world of skin, pulp and seed that holds the essence of place, climate and care. In the thin membrane of the skin, pigments and tannins await to shape colour and texture; inside lies the sugary heart that will ferment into alcohol and acidity that gives life its balance.

This transformation, from the rigor of early growth to the lush complexity of a ripe berry, is the quiet miracle that every bottle carries.

To taste such a wine is to glimpse the patience of the vine, the artist’s hand of the grower, and the long, unspoken dialogue between earth and sun.

The name hints at the mood, but the wine is grounded in intention.

In a Hell Mood is a Demeter-certified pet-nat from Burgenland, made by the Rennersistas as a tribute to their father, Helmut.
Produced from 100% St. Laurent, the grapes are whole-bunch pressed and bottled before fermentation finishes, following the traditional pétillant naturel method that captures the wine’s natural sparkle.

In the glass, it’s light and precise, with a menthol note on the nose, followed by citrus, pear, and grapefruit, and a faint touch of smoke and hazelnut. Though often approached as a drink-for-now style, this pet-nat has the balance to evolve, gaining finesse with time while remaining dry, fresh and always expressive.
