Switzerland is famously capitalist. Its two biggest food retailers are cooperatives.

At Migros, members were asked whether its supermarkets should sell alcohol. The campaign produced two b**rs, Oui and Non. All ten regional cooperatives voted Non. The b**r stayed off the shelves.

Milk offered a smaller form of participation. Outside a village shop in Sils, a machine supplied the milk. Whoever wanted some had to bring a bottle.

The machine had instructions, too. They were in German, and the milk was already gone by the time their most useful point became clear.

During the war, a Japanese soldier lay wounded near a rice field in China. As the story goes, Chinese villagers found Keisaku Maki, fed him and protected him from capture. He returned to Japan believing he owed them his life.

Decades later, a young Taiwanese businessman named Tsai Eng-meng spent three years asking Maki to teach him how to make rice crackers. Maki finally agreed. The kindness he remembered from China was part of his reason.

In Japanese, on describes a kindness received and the gratitude it leaves. En is the connection that brings people together. In Spanish, destino comes close.

Above the entrance to Want Want’s Shanghai headquarters are four characters: 有緣相聚. Brought together by fate.

For three years, I have owned a sailboat called More Chaos. The name came with the boat. The skills did not. We take it out about once a month, and I still don’t really know how to sail.

When does someone become a sailor?

Australia likes rules. Some are written into law. Others are stacked on parking poles, three or four signs high, with arrows, hours and exceptions that can take longer to read than to park. Even its biggest spectator sport is called Australian Rules.

And then there is the sausage sizzle, an institution that somehow needs no instructions at all. Nobody seems to ask who invented the Australian sausage sizzle. It became Australian by turning up outside schools, hardware stores and polling places.

Avocado toast got a more complicated origin story. The first result Google showed me credited a Sydney chef with inventing its modern form.

In Mexico, we had been smashing avocado in molcajetes and spreading it on warm tortillas with a little salt for centuries. Before it was aguacate, it was āhuacatl, the Nahuatl word that also meant testicle. Sydney could not have invented that.

What Australia added was everything around it. Sourdough. A flat white. The beach a few streets away. A breakfast that can occupy half the afternoon. That is what makes avocado toast Australian.

Calling it an invention was where I got stuck.

Some Things Travel. Others Refuse.

People cross borders. Recipes do too. Rice meets pasta, families change countries, and nobody is quite sure where everything began.

The pilaf keeps showing up on the table anyway.
Sometimes being lost has nothing to do with geography.

Local legend says porchetta began as a meal for gods, with pork sacrificed to Jupiter above Lake Albano. Centuries later, the popes made the far side of the lake their summer retreat.

At Castel Gandolfo, Cioli had a queue for porchetta in bread. Across the street, Pagnanelli served it inside ravioli, with yellow cherry tomato sauce and ricotta.

The rosemary was still there. The bread had become pasta.

A papal election comes with tailoring problems. When Angelo Roncalli became John XXIII in 1958, the white cassock selected for him was too small. The crowd was waiting, so the back had to be opened and held together with safety pins before he appeared on the balcony.

The crowd saw apostolic continuity.

Someone behind him saw the safety pins.

Grandeur, once you get close enough, becomes practical.

Sometimes it needs safety pins. Sometimes it tastes like pasta.

A taco de carnitas is a terrible thing to ask follow-up questions.

Ask a taco de carnitas where the pork came from and it stops being lunch. It becomes an excavation.

Before the carnitas there was a pig. The pig led back to a farm, the farm to a ruined hacienda, and beneath the ruins, grain.

Keep digging long enough in Mexico and eventually you reach religion.

Some cities preserve tradition by leaving things exactly as they were.

Turin seems to have done the opposite.

Switzerland is neutral.

Lunch wasn’t.

One plate arrived with pasta from Italy, dried meat from the Swiss side, a menu in German, and a waitress who crossed the border by train every morning.

Sometimes a plate explains history better than a museum.
