The best mess-free hack for crispy chicken cutlets 🤌
I took ground chicken cutlet recipe and made a few upgrades (and shout out to for the amazing rec!):
→ Cassava flour instead of regular flour (GF)
→ Lupin flakes instead of breadcrumbs (more protein + fiber, fewer carbs)
And honestly… I’m never going back.
The trick? Wet the lupin flakes with avocado or olive oil so they crisp up and basically fry in the oven 👏
✔️ super crispy outside
✔️ juicy inside
✔️ way easier than nuggets since no pan frying is needed (my kids devoured these)
Plus you’re getting ~6–8g more protein + 3x the fiber per serving compared to traditional cutlets. Such an easy upgrade!
