Tomato Beef Stir-Fry is a perfectly combines the rich flavor of tomatoes with tender beef.
Ingredients (2 servings)
250 g beef (sirloin or tenderloin, thinly sliced)
3 tomatoes
3 cloves garlic
1 green onion
Marinade for Beef
1 tbsp soy sauce
1 tbsp cooking wine
1 tsp cornstarch
1/2 egg white
1 tsp cooking oil
Seasoning
1 tbsp tomato ketchup (optional)
1/2 tsp sugar
Salt to taste
Black pepper to taste
Instructions
1. Marinate the Beef
Slice the beef thinly against the grain.
Add soy sauce, cooking wine, cornstarch, egg white, and oil.
Mix well and marinate for 10 minutes.
2. Prepare the Tomatoes
Score a small cross on the bottom of each tomato.
Blanch them in hot water for 30 seconds, then peel and cut into chunks.
3. Stir-Fry the Beef
Heat oil in a wok over high heat.
Add the beef and stir-fry for 30–40 seconds until it just changes color.
Remove immediately and set aside.
4. Cook the Tomatoes
In the same pan, add garlic and sauté until fragrant.
Add tomatoes and cook until they become soft and release juice.
Add tomato ketchup and sugar.
5. Combine
Return the beef to the pan.
Stir-fry for about 30 seconds.
Season with salt and black pepper, then add chopped green onion.
Serve hot.
Tips
Slice beef against the grain for a more tender texture.
Do not overcook the beef; it should stay soft and juicy.
Adding a small piece of butter when cooking the tomatoes will enhance the flavor.
