🥪 Mediterranean Spinach Grilled Cheese with Sun-Dried Tomatoes
Prep Time: 10 minutes
Cook Time: 10 minutes
Servings: 2 sandwiches
🛒 Ingredients
4 slices sourdough or whole-grain bread
1 tbsp olive oil
1 tbsp butter, softened
2 cups fresh spinach
½ cup sun-dried tomatoes, chopped and drained
1 cup shredded mozzarella cheese
½ cup crumbled feta cheese
1 garlic clove, minced
½ tsp dried oregano
¼ tsp red pepper flakes, optional
Salt & black pepper, to taste
👩‍🍳 Instructions
Sauté the spinach: Heat olive oil in a skillet over medium heat. Add garlic and cook for about 30 seconds. Add spinach and cook for 2–3 minutes until wilted. Season with a little salt and pepper.
Add the tomatoes: Stir in the chopped sun-dried tomatoes, oregano, and red pepper flakes. Cook for another 1 minute, then remove from heat.
Assemble: Butter one side of each bread slice. On the unbuttered side, layer mozzarella, the spinach and sun-dried tomato mixture, and crumbled feta. Top with another slice of bread, buttered side facing outward.
Grill: Heat a skillet over medium-low heat. Place the sandwiches in the pan and cook for 3–4 minutes per side, pressing gently with a spatula, until the bread is golden and crispy and the cheese is melted.
Serve: Remove from the skillet, let rest for 1 minute, then slice in half and serve warm.

🍠 Layered Sweet Potato, Spinach & Ricotta Lasagna with Walnuts & Raspberry Honey Sauce

🛒 Ingredients
For the Lasagna
2 large sweet potatoes, peeled and sliced lengthwise into ¼-inch thick slices
2 tbsp olive oil
1 small onion, finely diced
3 cloves garlic, minced
8 cups fresh spinach
15 oz (425 g) ricotta cheese
½ cup grated Parmesan cheese
1 large egg
½ tsp dried oregano
½ tsp dried basil
¼ tsp nutmeg
Salt & black pepper, to taste
½ cup shredded mozzarella cheese
½ cup chopped walnuts
For the Raspberry Honey Sauce
1 cup fresh or frozen raspberries
2 tbsp honey
1 tbsp lemon juice
1 tbsp water
½ tsp balsamic vinegar
Pinch of salt
👩‍🍳 Instructions
Prepare the sweet potatoes: Preheat oven to 400°F (200°C). Brush sweet potato slices with olive oil and season lightly with salt and pepper. Arrange on a baking sheet and roast for 15–18 minutes, until just tender.
Cook the spinach: Heat 1 tbsp olive oil in a skillet over medium heat. Add onion and sauté for 3–4 minutes. Add garlic and cook for 30 seconds. Add spinach and cook until wilted. Remove from heat and squeeze out excess moisture.
Make the ricotta filling: In a bowl, combine ricotta, Parmesan, egg, oregano, basil, nutmeg, salt and black pepper. Stir in the cooked spinach mixture.
Make the raspberry sauce: Add raspberries, honey, lemon juice, water, balsamic vinegar and a pinch of salt to a small saucepan. Simmer over medium-low heat for 5–7 minutes, gently breaking down the berries. Remove from heat and set aside.
Layer the lasagna: Reduce oven temperature to 375°F (190°C). Lightly grease a baking dish. Add a layer of sweet potato slices, followed by ricotta-spinach filling, a sprinkle of walnuts and a little mozzarella. Repeat the layers, finishing with mozzarella and walnuts on top.
Bake: Cover loosely with foil and bake for 30 minutes. Remove foil and bake for another 10–15 minutes, until golden and bubbling.
Rest & serve: Let the lasagna rest for 10 minutes before slicing. Drizzle each serving with the warm raspberry honey sauce.

🥒 Shredded Zucchini Cheddar Garlic Bread

Ingredients
2 cups shredded zucchini
1½ cups all-purpose flour
1½ tsp baking powder
½ tsp baking soda
½ tsp salt
½ tsp black pepper
1 tsp Italian seasoning
3 cloves garlic, minced
2 large eggs
½ cup melted butter
½ cup sour cream or Greek yogurt
1½ cups shredded sharp cheddar cheese
¼ cup grated Parmesan cheese
2 tbsp fresh parsley, chopped
Instructions
Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
Place shredded zucchini in a clean kitchen towel and squeeze out as much moisture as possible.
In a bowl, whisk together flour, baking powder, baking soda, salt, pepper, and Italian seasoning.
In another bowl, whisk eggs, melted butter, sour cream, and minced garlic.
Add the wet ingredients to the dry ingredients and gently mix until just combined.
Fold in the shredded zucchini, 1 cup cheddar, Parmesan, and parsley.
Pour the batter into the prepared loaf pan and smooth the top.
Sprinkle the remaining ½ cup cheddar over the top.
Bake for 45–50 minutes, or until golden brown and a toothpick inserted in the center comes out mostly clean.
Let the bread cool in the pan for 10–15 minutes, then transfer to a wire rack.
Slice and serve warm.
🧄 Serving Tip

For an extra-garlicky finish, brush the warm loaf with a little melted butter mixed with minced garlic and parsley.

🧀 Parmesan Crusted Chicken with Creamy Garlic Sauce
Ingredients
For the Chicken:
2 boneless, skinless chicken breasts
½ cup grated Parmesan cheese
½ cup breadcrumbs
1 large egg
1 tsp garlic powder
½ tsp Italian seasoning
Salt & black pepper, to taste
2–3 tbsp olive oil or butter
For the Creamy Garlic Sauce:
2 garlic cloves, minced
1 tbsp butter
1 cup heavy cream
½ cup grated Parmesan cheese
¼ tsp Italian seasoning
¼ tsp black pepper
Salt, to taste
1 tbsp chopped fresh parsley
👩‍🍳 Instructions
Prepare the chicken: Slice each chicken breast horizontally to make thinner cutlets. Season both sides with salt, pepper, garlic powder, and Italian seasoning.
Make the coating: Place the Parmesan and breadcrumbs in a shallow bowl and mix well. Beat the egg in another bowl.
Coat the chicken: Dip each chicken breast into the beaten egg, then press firmly into the Parmesan-breadcrumb mixture until completely coated.
Cook: Heat olive oil or butter in a large skillet over medium heat. Cook the chicken for about 4–5 minutes per side, until golden brown and cooked through. The internal temperature should reach 165°F (74°C). Remove and set aside.
Make the garlic sauce: In the same skillet, melt 1 tbsp butter. Add minced garlic and cook for about 30 seconds, until fragrant.
Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan, Italian seasoning, and black pepper. Cook for 2–3 minutes, stirring until the sauce becomes creamy and slightly thickened.
Combine: Return the crispy chicken to the skillet and spoon the creamy garlic sauce over the top. Simmer gently for 1–2 minutes.

🫒 Mediterranean Nachos
🛒 Ingredients
For the nachos:
4 cups tortilla chips
1 cup cooked chickpeas, drained
½ cup cherry tomatoes, halved
½ cup cucumber, diced
¼ cup red onion, finely sliced
½ cup Kalamata or black olives, sliced
¾ cup crumbled feta cheese
¼ cup fresh parsley, chopped
1 tsp dried oregano
½ tsp red pepper flakes (optional)
Creamy Tzatziki Sauce:
½ cup Greek yogurt
½ cucumber, grated and squeezed dry
1 garlic clove, minced
1 tbsp lemon juice
1 tbsp olive oil
1 tbsp fresh dill or parsley
Salt & black pepper to taste

Prepare the tzatziki: Mix Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, dill, salt, and pepper. Refrigerate until ready to use.
Layer the chips: Spread tortilla chips evenly on a large baking sheet.
Add toppings: Sprinkle chickpeas, tomatoes, red onion, olives, feta, oregano, and red pepper flakes over the chips.
Bake: Bake at 400°F (200°C) for 7–10 minutes, just until the chips are warm and the feta is slightly softened.
Finish: Remove from the oven and top with diced cucumber and fresh parsley.
Drizzle: Spoon the tzatziki generously over the nachos. Add a little extra olive oil and lemon juice if desired.

🥗 Cottage Cheese Chicken Salad
🛒 Ingredients
2 cups cooked chicken breast, shredded or chopped
1 cup cottage cheese
½ cup red grapes, halved
½ cup celery, finely chopped
¼ cup red onion, finely diced
¼ cup walnuts, chopped
2 tbsp fresh parsley, chopped
1 tbsp lemon juice
1 tsp Dijon mustard
½ tsp garlic powder
½ tsp black pepper
¼ tsp salt
1–2 tbsp Greek yogurt (optional, for extra creaminess)
Lettuce or spinach, for serving
👩‍🍳 Instructions
Add the cottage cheese, lemon juice, Dijon mustard, garlic powder, salt and black pepper to a bowl. Mix well.
Add the shredded chicken, grapes, celery, red onion, walnuts and parsley.
Gently toss everything together until evenly coated and creamy.
For an even smoother texture, blend the cottage cheese mixture before adding it to the chicken.
Refrigerate for 20–30 minutes so the flavors come together.
Serve over lettuce or spinach, or enjoy it in a sandwich/wrap.

Slow Cooker Creamy Garlic lamb Chops & Potatoes
Ingredients
4 thick-cut boneless lamb chops
1 lb (450 g) baby potatoes, halved
1 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp paprika
1 tsp Italian seasoning
6 cloves garlic, minced
1 small onion, sliced
1 cup chicken broth
1 cup heavy cream
½ cup grated Parmesan cheese
1 tbsp butter
1 tbsp cornstarch + 2 tbsp water
2 tbsp fresh parsley, chopped
Instructions
Season the pork: Pat lamb chops dry and season both sides with salt, pepper, paprika, and Italian seasoning.
Sear: Heat olive oil in a skillet over medium-high heat. Sear lamb chops for about 2–3 minutes per side until nicely browned.
Add to slow cooker: Place the halved potatoes and sliced onion in the bottom of the slow cooker. Put the lamb chops on top.
Make the garlic sauce: Mix chicken broth, heavy cream, minced garlic, butter, and Parmesan. Pour over the pork and potatoes.
Slow cook: Cover and cook on LOW for 4–5 hours, or until the pork reaches 145°F/63°C internally and the potatoes are tender.
Thicken: Mix cornstarch with water. Stir it into the sauce during the final 15–20 minutes of cooking.
Finish: Sprinkle generously with fresh parsley and a little extra Parmesan.
🔥 Tip: For the beautiful golden crust shown in the picture, definitely sear the lamb chops before putting them in the slow cooker. Serve with the creamy garlic sauce spooned over the top.

🍋 Lemon Butter Salmon with Roasted Potatoes & Broccoli
🛒 Ingredients
For the Salmon:
2 salmon fillets (about 6 oz / 170 g each)
2 tbsp butter, melted
1 tbsp olive oil
1 lemon — zest and juice
2 garlic cloves, minced
Salt and black pepper, to taste
Fresh dill or parsley, for garnish
For the Roasted Potatoes & Broccoli:
2 cups baby potatoes, halved
2 cups broccoli florets
1½ tbsp olive oil
½ tsp garlic powder
½ tsp paprika
Salt and pepper, to taste
👩‍🍳 Instructions
Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
Roast the potatoes: Toss halved potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread on the baking sheet and roast for 20 minutes.
Prepare the lemon butter: Mix melted butter, olive oil, lemon zest, lemon juice, and minced garlic in a small bowl.
Add salmon & broccoli: Toss broccoli with a little olive oil, salt, and pepper. Add broccoli and salmon to the baking sheet. Brush the salmon generously with the lemon-butter mixture.
Bake for another 12–15 minutes, or until the salmon flakes easily with a fork and the potatoes are golden and tender.
Finish & serve: Spoon any remaining lemon-butter sauce over the salmon. Garnish with fresh dill or parsley and extra lemon wedges.

🧀 Mediterranean Herb & Olive Cheese Log
Ingredients
16 oz (450 g) cream cheese, softened
4 oz (115 g) feta cheese, crumbled
½ cup sun-dried tomatoes, finely chopped
¼ cup green olives, chopped
¼ cup black olives, chopped
2 tbsp roasted red peppers, finely chopped
2 tbsp fresh parsley, chopped
1 tsp dried oregano
½ tsp garlic powder
½ tsp Italian seasoning
¼ tsp red pepper flakes
¼ tsp black pepper
1–2 tbsp olive oil
Instructions
Prepare the mixture: Add softened cream cheese and feta to a large bowl. Beat until smooth and well combined.
Add the Mediterranean flavors: Stir in sun-dried tomatoes, green olives, black olives, roasted red peppers, parsley, oregano, garlic powder, Italian seasoning, red pepper flakes, and black pepper.
Adjust the texture: Add 1 tablespoon olive oil and mix well. Add another tablespoon if the mixture feels too firm.
Shape the cheese log: Place a large sheet of plastic wrap on your counter. Spoon the cheese mixture onto it and shape it into a compact log.

Chicken
1 lb (450 g) boneless chicken breast, cut into bite-size pieces
1 tbsp extra-virgin olive oil
1 tsp dried oregano
½ tsp paprika
½ tsp garlic powder
½ tsp salt
¼ tsp black pepper
Juice of ½ lemon
Orzo & Vegetables
1 cup dry orzo
1½ cups chicken broth
1 cup cherry tomatoes, halved
1 cucumber, diced
½ red onion, thinly sliced
½ cup Kalamata olives
½ cup chickpeas, drained
½ cup crumbled feta
¼ cup fresh parsley, chopped
Lemon Dressing
3 tbsp extra-virgin olive oil
2 tbsp fresh lemon juice
1 tsp Dijon mustard
½ tsp dried oregano
1 small garlic clove, minced
Salt and black pepper to taste
Instructions
Toss chicken with olive oil, oregano, paprika, garlic powder, salt, pepper, and lemon juice.
Heat a skillet over medium-high heat and cook chicken for 6–8 minutes, turning until golden and fully cooked.
In another skillet, add orzo and chicken broth. Bring to a simmer and cook for 8–10 minutes, stirring occasionally, until tender.
Whisk together olive oil, lemon juice, Dijon mustard, oregano, garlic, salt, and pepper.
Add tomatoes, cucumber, red onion, olives, and chickpeas to the cooked orzo.
Pour over the lemon dressing and gently toss.
Top with the grilled chicken and crumbled feta.
