This is half of the chick peas curry I got at Pot Cova Restaurant.

😋 red and yellow bell peppers
😋 okra
😋 carrots 🥕

😋 coconut milk - that's how I cook my curry dishes as well

Finally - very flavourful. Jamaica 🇯🇲 might be qualified to enter the curry war after all!

COLOMBIA IMMERSIÓN DICIEMBRE

Following our visit to Cascada La Escalera waterfall, we rode horses 🐎 to a restaurant for lunch, the name of which I've temporarily forgotten. The view from the mountain wax was stunning.

As the group's sole vegan, I appreciated that our hosts/Spanish tutors selected restaurants that offered excellent vegan options.

My roasted plantain dish was filled with creamy avocado 🥑, corn, olives, and mushrooms, with the olives being the one non-local component. Another winner!

PS - I opted for a local brew instead of wine on this occasion.

The meals 😋 which I had in Colombia 🇨🇴 were consistently impressive.

I was pleased that restaurants, at which we ate, did not limit their vegan options to merely salads and fries.

The dish in the photos below is called "Despertar" and consists of falafel made with maiz (corn) instead of chick peas, served over baba ganoush and a beetroot sauce with toasted shredded coconut. Yucca on the side on banana leaf.

My first meal in Medellin was at an avocado 🥑 bar, where every dish featured a hint or more of avocado, including the lemonade, which was referred to as "aguacate limonada". Thankfully el vino was not made with avocado. One person also had an aguacate margarita. Jajaja!

The rest of the group shared "cheesecake" made with avocado, para postre.

I opted for an "avoburger", which consisted of a patty made with quinoa and frojoles negros, and baked tofu instead of cheese. The "pan" was a whole big creamy avocado, cut in two. It was muy rico!

​The Vegan "Egg": The centerpiece of the dish, it featured a "white" made from a creamy miso-infused coconut cream and a "yolk" made from sriracha mayo. This created a striking and realistic appearance, though its flavor was described as complementary to the dish rather than tasting exactly like a traditional egg.
