Some of life's best moments happen around the table.

A summer evening with family, friends gathered in the garden, the sound of laughter in the background, and a perfectly cooked steak at the centre of it all. Great food has a way of bringing people together, creating memories that stay with us long after the plates are cleared.

Have you tried cookin pork ribs on the BBQ. Perfect for a big feast or to share with friends. The smell is incredible and you can spend ages watching it 🤣🤣👀👀

BBQ Pork Ribs (1 Rack)

Ingredients

For the ribs

1 rack pork ribs

1 tbsp yellow mustard (optional, helps the rub stick)

Dry Rub

2 tbsp brown sugar

1 tbsp paprika

1 tsp smoked paprika

1 tsp kosher salt

1 tsp black pepper

1 tsp garlic powder

1 tsp onion powder

½ tsp chili powder or cayenne (optional)

Preparation

Remove the thin membrane from the back of the ribs if it's still attached.

Pat the ribs dry.

Lightly coat with mustard.

Mix the dry-rub ingredients and apply generously over both sides.

Let the ribs sit for 30 minutes at room temperature,

BBQ Setup

Aim for a cooking temperature of 225–250°F (107–121°C).

Charcoal grill: Arrange coals on one side for indirect cooking.

Gas grill: Light one side and cook the ribs on the unlit side.

Add a chunk of apple, cherry, hickory, or oak wood for smoke if desired.

Cooking

Place ribs bone-side down on the cooler side of the grill.

Cook indirectly for about 4–5 hours.

Every hour, lightly spritz with apple juice or a 50/50 apple juice–vinegar mix if desired.

When the meat has pulled back from the bones by about ¼–½ inch and a toothpick slides in easily, they're nearly done.

Sauce and Finish

Brush ribs with BBQ sauce during the last 20–30 minutes of cooking (optional)

Cook just long enough for the sauce to set and become sticky. Avoid saucing too early, as the sugars can burn.

Rest

Remove from the grill.

Rest for 10–15 minutes.

Slice between the bones and serve.

Serving ideas: coleslaw, salad, corn on the cob, potato salad, or grilled vegetables pair especially well with ribs.
