Kibingo Washing Station
Bourbon
Elevation: 1890 MASL
Fully washed

Kibingo Washing Station in Kayanza works with more than 3,500 smallholder farmers, each cultivating around 300 coffee trees on an average of just 0.1 hectares. Coffee is the primary source of income for these families, making quality production essential to their livelihoods.

Although named Kibingo, the washing station was ultimately built on the neighboring hills of Kirema and Kinga after the original site proved inaccessible and local regulations prevented construction there. The station’s retained name has created a friendly local rivalry between the surrounding communities, yet producers continue to work together to deliver some of Burundi’s most celebrated coffees.

Founded in 2022, Cooperativa Aljiri unites 19 smallholder coffee producers in the Collasuyo community of Caranavi. The cooperative was established to connect farmers directly with
specialty coffee buyers while improving the livelihoods of their families through quality-focused production.

Coffee is hand-picked at peak ripeness and fully washed using clean water. Farms prioritize sustainable practices, including organic fertilization with coffee husks, agroforestry systems, and
avoiding synthetic agrochemicals. Alongside expanding both production and quality, the cooperative also promotes gender equality through its “Matriarcas: Un Café con Igualdad” initiative.

Finca La Correa
Oliverio Ñañez & family
Varieties: Caturra, Colombia
Altitude: 1750 MASL
Farm size: 9 ha
Fully washed

Oliverio Ñañez and his family have built La Correa around meticulous farming, continuous quality improvement, and a passion for growing distinctive coffee varieties. Together with his wife and children, he reinvests in education, infrastructure, and better processing, ensuring the farm continues to evolve despite the challenges of steep, landslide-prone hillsides in Bruselas.

Coffee cherries are hand-picked at peak ripeness before 36 hours of whole-cherry fermentation. After depulping, the coffee undergoes 30 hours of fermentation in mucilage, followed by slow drying for around 20 days under the region’s cool mountain climate, producing a clean, elegant cup with bright citrus, delicate florals, and balanced sweetness.

We committed a small Italian crime.

We made an affogato without hot espresso. Before anyone reports us to Italy, hear us out.
Traditional affogato is simple: a scoop of vanilla ice cream and a fresh espresso poured right on top.
Simple.Classic.
Also… the espresso immediately starts melting the very thing it’s supposed to complement.

So we wondered: Why are we pouring hot coffee over frozen dessert if texture is half the experience?
Our version starts with a double espresso that’s allowed to cool. We then whip it with a single ice cube until the coffee transforms into a silky emulsion.

No milk.No cream.
Just espresso, air, and the natural oils already present in the coffee.

The result is thicker, smoother and surprisingly creamy. Instead of flooding the ice cream with heat, it gently coats it. That means the ice cream stays ice cream for longer.
Crazy concept, we know.
Every spoonful keeps the contrast we actually want: cold, creamy vanilla wrapped in concentrated espresso instead of swimming in melted dessert soup.

This creates a more balanced dessert. The ice cream remains creamy for longer, the coffee retains its body, and every spoonful delivers both textures in harmony instead of becoming diluted within seconds.

We’re not trying to rewrite Italian history. We’re just trying to be a little nicer to the ice cream and simply exploring a different expression of the same idea. One that emphasizes texture, temperature, and the unique sensory qualities of espresso.

That’s why we call it FREDDOGATO.

Sometimes the best way to improve a classic is to stop setting it on fire.

COLOMBIA HENRY MUNOZ - WASHED ROSADO

RED APPLES - BROWN SUGAR - BUBBLE GUM VIBE

Huila / San Agustin
Monkaaba smallholder coffee growers / finca Los Naranjos
Pink bourbon
Elevation: 1800 MASL
Imported by Semilla
Fully washed

🎨

From Semilla’s original purchase in 2020 of six producers, the Monkaaba project has blossomed into a tight-knit network of 60 families, all of whom are driven by an interest to know more about their coffee, how it might be improved, and how they can form resilient, stable relationships. It may surprise the coffee drinker and even the specialty coffeee professional to know that the vast majority of Colombian smallholders, despite all their nation’s fame as a coffee producing country, still find themselves locked out of a market that would offer them a basically sustainable price. San Agustin has a long and storied history of coffee production, being one of the first areas to participate in the Federacion Nacional de Cafeteros (FNC). There are some 6,000 growers in this area, and yet the vast majority continue to sell their coffees either for market prices for about half of market price. The producers are often being lied to about their coffee quality when they stumble upon a buyer who’s not honest.
