After spending the last five years travelling to different parts of the world, I wanted a way to share what I was experiencing with everyone. Originally I had conceived that creating a cookbook would best serve this purpose, although I soon came to realize that a “cookbook” gives the notion of originality or a “spin” on what someone else has already created.. Rather than just creating my own “spin”, I wanted to share the best of what I found in my travels and what better way to do that than through a collection of recipes, photos, and notes. The book is still a work in progress with no set page length or expected time for completion, so in the mean time I wanted to share a little bit of things I find along the way.

Stopped in at EFI Pivovar and came across their Food Sharing menu. A lineup of traditional Czech dishes designed for the table or one? Think crispy breaded schnitzel platters, slow-roasted duck with dumplings and cabbage, classic beef tartare, and even whole roasted goose. Then again, 1kg of tartare?

Golden, bubbling, and unmistakably Georgian.
This is khachapuri, Georgia’s iconic cheese-filled bread. crispy on the outside, rich and molten within, crowned with a silky egg yolk and finished with melting butter. Meant to be torn, mixed, and enjoyed slowly, one indulgent bite at a time.
