Back in Berlin and the first Jura-based winery on our list. We’re so pleased to share Les Valseuses (Casa Antolià - Les Valseuses), run by the lovely Antoine and Julia. Two very inspiring people running an ambitious and passionate négociant project.

Inspired by the abundance of fruit trees at Domaine Trouillas, we’ve been playing around with cold brew recipes.

We bruised both the fruit and the leaves from fig trees and left them to infuse overnight in filtered water. This was then simply strained - the figs added a subtle natural sweetness and the leaves bring aromatics of vanilla and coconut.

Measure with your heart and use whatever fruits and herbs you have at your disposal!
