We’ve been tinkering with our croissant recipe for a while now.
The biggest motivation was consistency. We wanted every croissant to be just as good as the last. So we looked closely at the dough and changed quite a bit, without touching the actual ingredients, just the ratios.
One thing that changed a lot for us behind the scenes: our pastry team used to just borrow the sourdough starter from our bread. Turns out the new dough needed its own, so now they make and feed a separate one just for the croissants, every single day.
We named him Gary, because he looks like a certain cartoon snail
The result: more of that classic croissant character, flakier, airier inside, buttery, and a touch less sweet than before.
