Late last month, we welcomed Roman Niewodniczanski of Van Volxem Winery (Wiltingen, Mosel 🇩🇪) on his first visit to Sydney in 30 years.

Roman is a charming, charismatic guy with a deep passion for the Mosel & German Riesling. A big name in the German wine scene, a real character, great to have had him here for a top visit.

We showed final remaining wines from our current stock, previewed samples of top cuvées arriving in the coming months, new additions from Matts tastings at the winery last year.

A leading voice in Riesling’s ongoing renaissance, Roman illuminated the estate’s meticulous, low‑intervention craft and its steep, slate‑rich vineyards, sites (some of the oldest plots in the area) once farmed by Romans, monks, and Jesuits.

Since revitalising Van Volxem in 2000, he has championed legendary slopes such as Scharzhofberg, Volz, Schonfels, and the dramatic Gottesfuß. The organic wines showed thrilling clarity, minerality, and drive pure, age‑worthy expressions of the Saar’s electric energy and sense of place that lingered long after tasting.

We are absolutely devastated and heartbroken by the news from our friend and colleague, Gilles Lapalus’s loss of his winery due to the fires in Central Victoria. Gilles Lapalus is a legendary Australian winemaker and has lost decades of his work, stock, equipment and everything else in his Harcourt based winery. We are lost for words and sending all our love to this great man. A terrible reminder of how treacherous and cruel the Australian Bushfire season can be. We will keep you posted and see what we can do to help in the coming weeks. Lots of Love my friend.

In the village of Deidesheim in Germany’s Pfalz region, Von Winning has been crafting wine since 1849. .winning 🇩🇪

Nestled among sandstone slopes and forested hills that shape some of southern Germany’s most distinctive wines.

Today, the estate offers a meticulously produced range of sustainable and biodynamic wines sourced from some of the finest sites in the region.

Among the many distinctions of this remarkable estate are its world-class Rieslings, born from an extraordinary terroir. The vineyards draw their character from a mosaic of soils volcanic basalt formed over 50 million years ago, limestone, sandstone, and remnants of ancient coral reefs, creating Grosses Gewächs (GG) wines that express the unique personality of each plot with stunning precision.

Intensive and sustainable work in the vineyards enables winemakers to produce an organic harvest of highly aromatic and healthy grapes. This valuable fruit is patiently vinified and untreated in the historic cellar.

Musts are fermented using their indigenous yeasts without artificial cooling in different sized old oak barrels and or stainless steel. Von Winning ages its wines on fine lees for up to 18-24 months, building texture and depth.

Maturation occurs in French oak barrels ranging from 500L to 1,200L. This approach imparts texture, delicate spice, and layered complexity, while preserving the vibrant fruit and mineral precision that define their style.

These very elegant, crisp wines undergo gentle winemaking to create electric bottles ready to drink now and the ability for many years to come...Winning!

A Sicilia Bianco IGT ‘collab’ made with Vincenzo Anglieri from legendary Marsala winery, Viteadovest .

Grecanico 50% , Catarratto 40%, Zibbibbo 10% (Direct press, spontaneous ferment, 6 months age on lees with battonage in stainless steel, unfiltered or unfined)

A wine that feels like a salty, fresh, Sicilian breeze straight to the face. It’s a sun-soaked crisp white from the coastal vineyards of Marsala, where the air smells like lemon trees and the sea is never far away.

Tropical notes come first. Think guava, melon skin, maybe a little underripe pineapple. Then it pulls tight with a dry, herbal finish. That Sicilian signature. Fresh herbs, salty breeze, dusty stone minerality. Lovely easy drinking texture and weight. A perfect wine for most peoples tastes.

Grapes are all organically grown on Vincenzo’s lands 90 metres above sea level that’s been worked for generations.

A great value very fresh, approachable and drinkable wine available now just in time for Spring! Grazie

Matthieu Barret 🐻 is a pioneer Northern Rhône winemaker, as our local B&B host on our last visit called him; “the rockstar of Cornas”.

Barret is the 7th generation winemaker in his family and his “new wave” ethos has redefined Cornas, blending tradition with innovation and authenticity in this famous Syrah growing region.

Since taking over Domaine du Coulet in 1998, Matthieu has embraced biodynamic farming, using horses and manual labour to preserve soil health known locally as Gore.

The 20–60-year-old vines in the vineyards, rooted in ancient clay & granite terraces, make for intensely expressive fruit at low yields. Matthieu makes wines with his eldest son Eliot who has been involved in the family business from a very young age.

In the cellar, there is no oak, only bespoke-made concrete eggs & vessels, glass demijohn and amphorae. This highlights the terroir and purity and great length that shows in his cuvées.

He ferments with wild yeasts, avoids temperature control, and uses gravity-fed systems. Grape varieties include Syrah, Grenache, Mourvèdre, Viognier, Marsanne to name most.

His wines are fruit driven, raw & vibrant earning Matthieu cult status among natural wine enthusiasts and court-certified sommeliers around the world.

Klinec Winery, nestled in Slovenia’s Brda region, is a heritage estate led by Aleks and Simona Klinec.

Situated in the picturesque villages of Dobrovo and Medana, near the Italian-Slovenian border, Klinec Winery stands among the most esteemed producers in the Collio Goriziano region.

Renowned for its commitment to high-end, minimal intervention winemaking, the estate is celebrated for crafting wines of exceptional purity, depth, and terroir expression. Its reputation places it firmly within the upper echelon of natural wine producers in this historically rich and geologically unique corner of Europe.

Their family has cultivated wine since 1918, working six hectares of steep, mineral-rich marl and sandstone slopes a mineral-rich region shaped by prehistoric seas between the Julian Alps and the Adriatic.

Committed to organic and low-intervention methods, the wines undergo spontaneous fermentation, long skin maceration, and mature at least 36 months on lees in an array of vessels—concrete, acacia, cherry, mulberry, and oak barrels.

This marks the first Australian release in many years of this cult status wine, with limited stock available, making it a rare opportunity.

PARASCHOS EVENT 1 ticket left ! Will be showcasing 5 cuvées from the Fratelli Paraschos.. amazing extended lees aged, organic juice from the hills of Gorizia, San Floriano in Fruili. A very famous and special area up on the Slovenian border with some vines over 80 years old and most wines made over a 2 year aging process to create very elegant, beautifully made natural wines with zero additions.
