My kiddos started school yesterday. One entered high school, one seventh grade. I forgot how productive I am with so many hours to myself. I was able to make cookies for all my building kiddos, husband's coworkers, and a few friends.

I hope your Saturday is as refreshing as mine has been! I got EIGHT hours of sleep, sipped my coffee slowly, went to the plant store with Chris, made a focaccia for church tomorrow, and I just taught Lynley how to make gnocchi pomodoro. It's been a beautiful day. 💜

Blueberry pastries are easier than they look.

Pastries:

1 roll of refrigerated puff pastry
(It's only 0.95€ here!!!)
Fresh blueberries
Cinnamon sugar*
(I'll add a recipe in the comments.)
1 egg, beaten for egg wash

Preheat oven to 400°. Let puff pastry rest on the counter for 10-15 minutes. Unroll pastry and top with cinnamon sugar (Season with your heart here) and a few handfuls of blueberries. Cut pastry into strips about 1 1/2 in and roll up, tucking stray blueberries back inside. Brush each pastry with egg wash and top with more cinnamon sugar. Bake for 18-20 mins and top with vanilla glaze*.

*Vanilla glaze

1/2 C powdered sugar
1/2 tbsp milk or heavy cream
1/2 tsp vanilla

Stir and drizzle over pastries. If it's too thick, add more milk. If it's too thin, add a little more powdered sugar.

Sometimes, a focaccia pizza is a thank you gift for a friend who changes the battery and helps repair the blinker in your truck. It was not an easy task.

If you have never removed the battery from a Chevy Colorado, watch a video. Lol I'm talking 10 lugnuts undone before you can even take the battery out. Please don't even get me started on what a replacement battery costs in Germany. Highway robbery!!

I love an easy cake recipe that you can whip up just because. This nectarine upside-down cake recipe is easy and delicious. Plus, you can use pretty much any fruit. I've done apples, pears, strawberries, blackberries so far.

Nectarine Upside-down Cake Recipe:

Dry ingredients:
2 C (240g) AP flour
1 C (200g) sugar
1 tsp baking soda
1/2 tsp salt
Dash of cinnamon, pumpkin pie spice, and cardamom, optional (this is a measure with your heart situation)

Wet ingredients:
1 cup buttermilk
1 stick of butter, halved and melted (I brown mine for a little extra flavor)
2 large eggs, room temperature
1 tsp vanilla

1/2 C brown sugar, packed
4 nectarines, sliced thinly

Preheat oven to 350. Measure dry ingredients into a medium bowl. Stir and set aside. Mix buttermilk, eggs, and vanilla into a large measuring cup. Brown or melt first half of butter and pour into a round cake pan. Brown or melt the second half of the butter and then let it cool for 10-15 minutes before tempering it into the buttermilk mixture. (To temper, pour butter into mixture while continually stirring the buttermilk mixture. You don't want to cook the eggs!) Pour wet ingredients into dry ingredients and fold until just mixed. Top your cake pan butter with brown sugar and then arrange your sliced nectarines however you'd like. Pour cake batter over the top. Bake for 40-45 mins or until a toothpick comes out clean. Rest for 10 mins before flipping. Enjoy warm with coffee or ice-cream or let it cool completely and slice.

It's been a season of "Goodbyes" lately. I've baked a lot of see you later cookies and farewell focaccias in the last month. Today is another round. Military life is full of ups and downs. One of the hardest parts is being the one who stays while so many friends leave for new adventures.

My favorite afternoon treat? Iced coffee!!! I love making fun syrups for them, too. Today's coffee is a nectarine latte....

My favorite afternoon treat? Iced coffee!!! I love making fun syrups for them, too. Today's coffee is a nectarine latte.

Nectarine Syrup:

2 C nectarines, diced
1/2 C brown sugar
1/2 C sugar
3/4 C water

Heat ingredients to slow boil. Turn down the heat to simmer for 10 minutes. Remove from heat and let sit for 30 mins. Strain, pressing those nectarine pieces to get all the juice out. Pour into a jar. Let cool completely and then refrigerate for two weeks. It's great in coffee or tea, over ice cream, or in desserts.

It's going to be 102° in Germany tomorrow. It was 100° today. Yep, you read that correctly. Unlike the US, most homes, restaurants, and grocery stores don't have AC. So, I'm making popsicles and pretending it's December. No, Florida didn't prepare me for this. I had central HVAC there. 🤣

Watermelon Popsicles

2 C cubed watermelon
2 Tbsp of sugar (I'm using some of my homemade strawberry top syrup instead.)
Juice of a lime
Pinch of salt

Blend and pour into molds or zip lock bags. Freeze. Enjoy! You could add other fruits, mint, etc. This is just what I had on hand.
