I love an easy cake recipe that you can whip up just because. This nectarine upside-down cake recipe is easy and delicious. Plus, you can use pretty much any fruit. I've done apples, pears, strawberries, blackberries so far.
Nectarine Upside-down Cake Recipe:
Dry ingredients:
2 C (240g) AP flour
1 C (200g) sugar
1 tsp baking soda
1/2 tsp salt
Dash of cinnamon, pumpkin pie spice, and cardamom, optional (this is a measure with your heart situation)
Wet ingredients:
1 cup buttermilk
1 stick of butter, halved and melted (I brown mine for a little extra flavor)
2 large eggs, room temperature
1 tsp vanilla
1/2 C brown sugar, packed
4 nectarines, sliced thinly
Preheat oven to 350. Measure dry ingredients into a medium bowl. Stir and set aside. Mix buttermilk, eggs, and vanilla into a large measuring cup. Brown or melt first half of butter and pour into a round cake pan. Brown or melt the second half of the butter and then let it cool for 10-15 minutes before tempering it into the buttermilk mixture. (To temper, pour butter into mixture while continually stirring the buttermilk mixture. You don't want to cook the eggs!) Pour wet ingredients into dry ingredients and fold until just mixed. Top your cake pan butter with brown sugar and then arrange your sliced nectarines however you'd like. Pour cake batter over the top. Bake for 40-45 mins or until a toothpick comes out clean. Rest for 10 mins before flipping. Enjoy warm with coffee or ice-cream or let it cool completely and slice.
