West Coast IPA with Spruce Tips, Baby Pine Cones, Pine Flowers, Juniper Branches and Walnut Leaves - 6,8%
Collaboration with Wildfooding
Samka is a mindful and deliberate collaboration developed by our brewer Sean and his good friend and trailblazing forager, Thomas Laursen of Wildfooding.
Heres some thoughts from Sean regarding this project:
"The idea is to combine the flavors of the United States (where I am from) and Denmark (where Thomas is from).
We use hops from the Yakima valley and foraged ingredients growing wild in Jylland. Just as Thomas was instrumental in helping expand the flavor palate of Nordic cuisine with unexamined and unappreciated local ingredients, our idea was to try to do that in b**r too."
Thomas foraged in Jylland for all the spruce tips, baby pine cones, yellow pine flowers, juniper branches and walnut leaves that were used along side our dry-hopping of Columbus, Chinook and Citra for Samka.
Tasting notes for this delicious b**r are bright bitterness balanced with citrus, eucalyptus and dark berries.
