Some times it happens that you find exactly what you didn’t know you needed, just by staying curious!
This is what happened at one of the wine salons we went to in France earlier this year, where we just happened to bump into a nice guy at the first table with some sparkling wines.
This was Alain Cordeuil and as he poured his champagnes, we looked at each other- this was something special! Alain was giggling behind the table as he told us how they do the second fermentation, started by the following vintage's must. Something quite atypical for the area!! We have just become increasingly intrigued after a visit at Alain and Salimas (his partner) home, cellar and vineyards last month.
Alain and Salima Cordeuil have been farming grapes in the Côte des Bars region of the Aube in the southern region of Champagne for 15 years. In that periode they have slowly increased the production of their own champagne, and are now managing 3,5ha, distributed over several vineyards. Over time they have converted to organic viticulture, and found their way to produce additive free champagnes that are reflecting their terroirs!
The village of Noé-les-Mallets and the surrounding vineyards, are situated as some of the highest in the region, and northern Burgundy is just a few kilometers away.
