Insight Cellars Blending & Brewing is our celebration of the art, science and passion of beer making, driven by our deep understanding and appreciation of wild fermentation. We craft premium quality beers drawing inspiration from the world's venerated fermentation traditions, while also exploring the boundaries between beer and wine and pushing the limits of what beer can be. The heart of Insight

Cellars is in our oak-aged, spontaneously fermented wild ales and mixed fermentation saisons, crafted from a house yeast culture that has been collected, isolated and refined over time from wild strains native to Refshaleøen on the Copenhagen harbor. The resulting beers are highly complex, multidimensional and entirely distinctive to the location where they were born. The original art-forward labels are designed to reflect the artfully crafted products inside the bottle. Following a methodical tasting and blending process, our beers are either bottled as they are to let the wild fermentation and barrel-aged character shine, or enhanced with luxurious and unexpected flavor additions such as fresh fruit, foraged herbs, vanilla, and house-made noyaux. We also work extensively with wine grapes to create unique hybrids that embody the best qualities of both beer and wine.

Many thanks to everyone who made it out to the blendery on Saturday for our Oktoberfest party and triple bottle release! For those of you who weren’t able to celebrate with us this time, we are happy to say that the new Insight Cellars bottles are now available on our webshop (link in bio). Please welcome O Tanoeiro 2023 - Danish Wild Ale aged in Port barrels.

O Tanoeiro is a tribute to the timeless craftsmanship of its namesake - the coopers who maintain the barrels where raw liquids are transformed into refined libations. We started with a blend of one and two-year-old Danish Wild Ales, and then aged it for a full year in barrels that previously held some of the finest from The Douro Valley in Portugal. The complexity and mild acidity of our Danish Wild Ales form the backbone of this blend, while the Port wine barrels bring forth flavors of bright red fruit and a touch of caramelized sugar.

This bottle will be making its debut this Saturday at our Oktoberfest party, along with Glimmering Grove 2023 and Nordens Kriek 2023. Let’s raise a glass together this weekend!

Introducing our next bottle ready for release on Saturday - Nordens Kriek 2023! 🍒

This is our local take on the classic kriek. The Stevns cherry – often hailed as “the grape of the north” – is an heirloom variety of sour cherry that can trace its origins to the coastlines of southern Denmark. Their elegant dark color and high acid content make these cherries ideal for the production of wine – or in our case, beer.

We started with a base of one-year-old Danish Wild Ale and macerated it for over a month with a large proportion of crushed Stevns cherries from Frederiksdal Estate, then matured the blend in oak foeders before bottling. The complexity of the beer and intense flavor of the cherries come together to create this truly emblematic Kriek of the North.

NEW RELEASE AHEAD! Well, actually three, all on the day of our Oktoberfest on the 28th, but we’re only sharing one for now! And that is the beatiful Glimmering Grove - we bottled up the high days of summer so we can enjoy those warm memories in autumn too.

Glimmering Grove is a celebration of ripe summer stone fruits plucked fresh from the tree. Its journey started with a base blend of one, two and three-year-old Danish Wild Ales aged in Chardonnay and Monbazillac barrels. We macerated this with over 600 grams of the finest Bergeron apricots and Tiffany white nectarines from France per liter of wild ale. The final blend features two-thirds apricot and one-third nectarine wild ale, resulting in a harmonious union of sweet and tart that captures the sunlit vibrancy of a summer orchard.
