Tomorrow night in the tasting room will be all about the ever fascinating realm of Namazake. There will be some unique offerings on hand to firmly submerge and dunk us into the wild flavors of unpasteurized premium sake. Among the selections are two bottles from the “Nama” specialist Hata Shuzo from Shiga.

Each season the brewery brews a tank of sake with a class of local high school students, all aged 19, as the sake is called. After brewing the sake it is aged for one year. By that time the students have turned 20 and are legally allowed to taste the sake, as 20 is the legal drinking age in Japan.

We were excited when we first heard about this project and are genuinely thrilled now to be able to share with you, a tasting of these truly elusive bottles, not for sale outside of Shiga.

Being served tea by Yuta san was exciting to say the least. With at most precision and care, Yuta san brewed his delicious tea, Yabukita Sencha. The tea leaves was measured using a weight, counter balanced by coins to find 4grams.
The temperature was at 80 degrees to extract balanced flavor and to release invigorating aroma’s. It was striking to know that this tea was brewed with the same ground water that the tea trees also drink from below the fields. A crystal clear purity shines forth in the cup 🌿

Yuta san, the prodigious young tea farmer who skillfully crafts refined teas which are also an expression of the land. With an emphasis on organic tea farming practices he is clearly mindful not only of his fields and tea, but also the mountain forest that encapsulates it. A view of the magnificent organic Yabukita fields at Yudani.In Ujitawara. The air was so crisp that you wanted to take in some very deep breaths. Along with the bright atmosphere and secluded calm, it was truly a place with a healing effect on body and mind.

It is in these fields that Nagatani produce their Yabukita Sencha that is one of our most essential teas. In the shop, we have been telling you about these fields, how the tree line at the edge of the forest shades the tea trees as the sun moves across the sky, creating “natural Gyokuro”. Now we could actually see it with our eyes. The impact of this experience is felt and kept here in Copenhagen 🌿

Having worked with Nagatani tea since 2021, a visit to their fields and processing plant in Ujitawara has been long overdue. Seeing everything up close and personal changed our perception. You truly find new layers of appreciation after seeing the scale of operation and sensing the peaceful atmosphere of the place itself. A brief tour of the small factory was an experience, to really grasp the extend of the labor and energy dispensed in order to produce the various forms of premium green teas🌿

Gose was impressive, the many older buildings was so well maintained, beaming in the afternoon sun. Along with the immaculately swept streets, it left an impression of local spirit and rich heritage.
Passing by the sake shop near Yucho Shuzo. You also quickly sense another local pride. Neatly arranged assortment of the two big Gose brands Shinomine and Kaze no Mori., side by side Truly a sight to behold 🍶

Kame pots aging sake the historic way. It goes to say that this part of the brewery was quite cold. The vision to create this style of sake seems to also come from a wish to establish clear timelines in Sake evolution specifically in Nara. The wealth of historical brewing information we received from Chobei san will need to be absorbed and digested to be able to communicate it. Unfortunately for us, Chobei san’s published research is only available in Japanese. Possibly AI can lent a hand in the near future ✨
