This week we're taking you into the butcher room as we break down the pork shoulder and follow it all the way through to some very familiar L&S products.
The shoulder gives us everything from Butt Roasts and slow-smoked pulled pork to coppa, ground pork and more than a dozen varieties of sausage.
And there's a lot more to this cut than you might think.

October is here! 🐷
A new month means a new L&S delivery schedule—check out where we’ll be headed throughout October and get those orders planned. And with El Niño getting underway, it’s not a bad time to keep that freezer stocked.
We’re also starting something new this month: Where Does Your Food Come From?
We talk a lot about what we make, but this month we’re taking you behind the scenes to show you where it all begins. We’ll start with the whole hog—from processing to breaking it down—and then take a closer look at different cuts, where they come from, what we use them for, and a little of what we’ve learned along the way.
