Jalapeño season is starting. Our fields are moving from flower to first fruit, and we are getting ready!

One plant, two peppers. Picked green, the jalapeño is herbaceous and tangy, with notes of green apple, cucumber, and soft leaf herbs, and a quick kick (5,000–8,000 SHU fresh) that fades as fast as it comes. Left on the plant, it ripens red and develops a sweeter, deeper flavor. Which one a buyer chooses depends on the product they’re building.

Food makers use jalapeño in brines, mash, salsas and sauces, and snack seasonings. We supply it brined, as mash, powder, or flakes, processed in Ecuador.

This photo was taken during one of our regular field visits to partner farms in northern Peru.

What does a field visit actually cover? Our team reviews crop management, the nutrition plan, integrated pest management and compliance with Good Agricultural Practices.

Import markets keep tightening residue checks on spices, and we welcome that — careful farming means safe food, and that's the standard we work to on every farm.

Every visit has one goal: guaranteeing quality, compliance, and full traceability, from the field to the final product.

Nothing replaces seeing the process in person.

Every time a client visits our farms and processing plant in Ecuador, it's a chance to show exactly how we work, from the plant floor to the harvest, and to get direct feedback that helps us keep improving. More than ever, buyers want to see the origin with their own eyes, not just read about it on a spec sheet.

Want to see where your ají comes from? Email [email protected] and we'll set up your visit.

Last week we welcomed one of our valued customers to the field, where our peppers are grown and harvested.

These visits are important as they keep us close to our customers and give them a real look at the people and processes behind every product.

From harvest to final product, this is how we build trust. 🌶️

Three varieties. One source. All grown in Ecuador.🌶️

Each with its own flavour, heat, and story, sourced directly from the smallholder farmers we work with across Ecuador and Peru.
Not all heat is the same. And that’s exactly the point.

Big News! 🌱
We’ve partnered with the Dutch Fund for Climate and Development, supported by WWF, to build climate resilience across our chilli supply chain.

Climate-risk assessments, new agriculture standards, field training — across Ecuador and Peru, working with ~1,000 farmers in our network.

Every pepper we source has a story worth protecting. 💪

Chilli fields in the highlands. 🌿
This is where some of our peppers start — high altitude, rich soil, and farmers who know their land.

From here to your product line, every step is traceable.

This is what carolina reaper, green habanero and tabasco look like before they become part of your product.

Three varieties. Three colours. Three heat profiles — each processed into paste ready for industrial use.
Our pastes and mashes are used in hot sauces, marinades, ready meals, dressings, and more. We process each variety to preserve its natural colour, heat, and flavour — so what you get in the barrel is what your customer tastes in the final product.

Tell us what you’re making and we’ll match you with the right paste.

The beginning of something spicy starts right here 🌱🌶️

These peppers are still growing in the field, before they move into processing and packing.

A little behind-the-scenes look at the fields behind the flavor 👀
