Our agricultural team was in Quinindé last week for another Field School session, working side by side with grower partners on crop health, fruit quality, and quality standards at the farm level.

With over 1,000 farmers in our network across Ecuador and Peru, this is how we keep standards consistent: not by inspecting at the end, but by being there from the start. 💪

Not all heat is the same.
From mild to super hot, each chili brings its own character — in flavor, aroma, and how it performs in a product. Today we’re sharing four of our favorites across the heat spectrum.
🌿 Shish*to (1/5)
Mild overall, with an earthy-sweet profile and slight natural variability. Originally from Japan and known as the “Lion Pepper.” Great when you want brightness without too much intensity.
🌶 Serrano (2/5)
Named after Mexico’s “Sierra” regions. Clean, sharp warmth and a bold, fresh taste. Versatile and well-suited for both fresh and brined applications.
🔥 Habanero (4/5)
Aromatic and fruity (“tropical”), with serious heat to match. Smooth, shiny pods that bring both intensity and depth to a wide range of products.
⚡ Carolina Reaper (5/5)
Extremely hot, yet surprisingly sweet and highly aromatic. Used carefully, it delivers powerful heat with added complexity.

Pequín peppers don’t need size to make a statement. Their thin walls and concentrated capsaicin mean the heat shows up fast and stays precise. That’s what makes them a natural fit for oils and vinegars, where they release intensity quickly and let the base ingredient still speak.

Used whole or lightly crushed, pequín brings a sharp, clear heat that is present, intentional, and never heavy-handed.

🌶️ Last week we talked about the Congo pepper — but that’s just part of the story.

The Congo family comes in different varieties, and Yellow Congo stands out on its own.

At UCHU, our fresh Yellow Congo typically comes in at 50,000–90,000 SHU, delivering heat that’s clear and direct, with a lighter edge. Once processed, subtle citrus-leaning notes become more noticeable, giving the heat a brighter feel.

With its firm structure and stable color, Yellow Congo works especially well in mashes, purées, and sauces, when you want heat that shows up both in flavor and appearance.

In this Pepper Spotlight, we’re bringing you the Congo pepper, a chili from the Caribbean, closely related to habaneros (you could say they’re cousins).

These peppers are known for their size, strong heat, and bold character. Depending on the variety, they mature from green to deep red or darker tones, and are commonly used in sauces and dishes where heat is meant to be clear and present.
