Nuestros racimos 🍇
Hoy cogemos una caja de la mesa de selección. Estos racimos vienen de nuestra parcela La Martínez, en el noroeste de Cehegín.
Esto es lo que buscamos:
· Granos pequeños: hay más piel en el mosto, y eso da más sabor y más aroma al vino.
· Racimos sueltos y aireados, no demasiado grandes.

Today we took a box straight from the sorting table. These clusters come from our La Martínez plot in north-west Cehegín.
This is what we look for:
· Small berries: more skin in the must, which means more flavour and more aroma in the w**e.
· Loose, airy clusters that aren’t too big.
When the fruit looks like this, we barely need to step in. We just guide it, so the w**es we fall in love with can reach you.
