David makes wines in four different regions of Spain and one project in Mosel, Germany. Rioja Alavesa Wines: Phincas, PhincA Abejera, and Phinca Lali, Terca, Vuelta de Terca and Thousand Milks are all produced from David’s family vineyards consisting of old bush vines, surrounding the village of Elvillar. Technology in the industry today, makes it easy for producers to forget the connection with the raw material. When a wine is made only in the winery and the connection to its environment is lost, the soul of the wine is lost and it’s people become lost along with it. David feels that if you stay connected to the earth, that balance will transmit itself into the bottle. He produces wines based on Biodynamic principals which is not only a range of procedures, it is a work-life philosophy that looks for harmony between the earth, living beings, the cosmos and the vines, in order to guarantee an ecological product, while at the same time ensuring sustainable development. Due to the small size of his individual parcels, his vineyards are not certified by Demeter. However, this does not change his philosophy to create sustainable and unique wines. David’s passion for authentic winemaking, has taken this ecological stance one step further. He is constantly seeking out areas that have traditionally produced excellent wines, but due to current societal trends that demand well-known varieties (merlot, cabernet sauvignon), they have been forgotten. Understanding that the essence of the winemaking process begins with the environment, caring for the land ensures a healthier end result (wine).
