YES! YES! YES! WE ARE FINALLY DOING IT! 🎉🎉🎉

We've been absolutely ITCHING to send this post out, and after months of waiting, planning, building, problem-solving and a few moments of complete madness, the time has FINALLY arrived…

THE CHIPPY CORRALEJO IS OFFICIALLY OPENING THIS FRIDAY! 🐟🍟💙

The long wait is over, folks. Three months of hard work, six weeks of unexpected delays, countless problems, even more solutions and an incredible amount of love and support from you lovely lot have finally brought us to the moment we've all been waiting for.

We're opening the doors to the public, and we genuinely couldn't be more excited! ❤️

Now, before you all start getting your orders ready, there are a few important things we need to share with you about our opening weekend.

🕔 FRIDAY 9TH OCTOBER – 5PM TO 9PM

🕒 SATURDAY 10TH OCTOBER – 3PM TO 7PM

These are our confirmed opening hours for Friday and Saturday ONLY, as we continue through our soft-opening phase.

As we've explained in our previous posts, we've still got a few operational challenges to work through, particularly around preparation, kitchen space and getting our service running as efficiently as we'd like. So rather than trying to do too much too soon, we're going to keep things sensible, build up gradually and give the team the opportunity to find their feet.

And that brings me to something else that's really important…

PATIENCE, PLEASE! 😂🙏

The buzz surrounding The Chippy has been absolutely incredible, and judging by the messages, comments and conversations we've been having, we're expecting a very busy opening night.

And we LOVE that. Honestly, BRING IT ON! 😂🔥

But please remember, this is our very first public service. We're still learning how to work together in a much smaller kitchen, fine-tuning our preparation and finding the best way to get everything cooked fresh and served to the standard we want.

There may be queues, there may be a bit of a wait, and things might take a little longer than they eventually will once we're fully up and running.

All we ask is that you bring a little patience along with your appetite. We promise we'll be working our socks off to get everyone fed, and we want your first experience of The Chippy to be a great one. 💙

And don't forget, our TERRACE WILL BE OPEN too! ☀️🍟

So if you fancy sitting down and enjoying your Chippy tea with us rather than taking it away, you're more than welcome. Seating is limited, though, so if you're hoping to grab a table, we'd definitely recommend arriving early.

At 5PM ON FRIDAY, those doors will open, the fryers will be fired up, and we'll finally get to do what we've been dreaming about for the last three months…

SERVE YOU SOME PROPER FISH & CHIPS! 🐟🍟🔥

It's quite hard to put into words how much this moment means to us. We've put so much into getting this little business ready, and there have been plenty of days when it felt like we'd take one step forward and three steps backwards.

But we kept going, and now we're here.

We've always wanted to create a proper British fish and chip shop that Corralejo can be proud of. Somewhere locals and holidaymakers alike can come for a cracking Chippy tea, whether that's taking it home for the family or sitting outside with a cold drink and enjoying a bit of sunshine.

And now we finally get the chance to bring that vision to life. 💙

And you know what makes the opening date even better?

CHIPPY FRYDAY! 😂🍟

It just HAD to be a Friday, didn't it?!

It's almost like it was written in the stars. ✨

So there you have it, folks. No more waiting for permissions, no more wondering when we'll be opening and no more teasing you with pictures of the shop.

THIS IS IT. WE'RE OPENING! 🎉

Thank you all so much for the incredible support you've shown us throughout this journey. You've followed every twist and turn, laughed along with our disasters, celebrated our little victories and kept us going with your lovely comments and messages.

Now it's finally time to welcome you through those doors.

💙 IT'S A FAMILY AFFAIR 💙

Of all the things I've been fortunate enough to experience on this crazy journey of building businesses here in Fuerteventura, there's one thing that means more to me than anything else, and that's getting to share it all with my family.

My wife, my children and my in-laws have all been an incredible support network for me, and I don't think I'll ever be able to put into words just how grateful I am for everything they do.

Behind every new business, every opening day, every little success and every challenge we've had to overcome, there's a family working together, supporting each other and doing whatever needs to be done to keep things moving. ❤️

And believe me, over the last few months with The Chippy, there's certainly been plenty that needed doing! 😂

But that's what makes it so special. It's not just about opening another business or building something successful. It's about creating something together, sharing the excitement, dealing with the difficult days, laughing at the ridiculous moments and celebrating those little victories as a family.

We all have our different roles, we all bring something different to the table, and we certainly don't always agree on everything! 😂 But at the end of the day, we're all pulling in the same direction, working hard for each other and wanting to see each other succeed.

And when I look around at what we've achieved together, especially as we're about to open the doors of The Chippy, I can't help but feel incredibly proud.

Businesses will come and go, there will always be another challenge around the corner and another mountain to climb, but getting to experience these moments with the people I love is something I'll never take for granted.

A proper family business, built on hard work, love, loyalty and looking after each other. 💙

I know how fortunate I am to have that, and I appreciate it more than words can say.

I'm a very lucky man. ❤️

🐟🍟 SOFT OPENING PHASE – THE NEXT FEW WEEKS! 💙

OK folks, following the success of last night’s soft opening, we are now almost ready to throw open the doors to you lovely lot and FINALLY start serving up some cracking Chippy teas! 🎉

But before we do, we want to share some important information about our opening hours over the next few weeks, so everyone knows exactly what’s happening, what to expect and, more importantly, WHY we're doing things a little differently.

As you’ll have seen from our earlier post, last night was a massive success, but it also highlighted a few challenges that we need to work through behind the scenes. Space, preparation and kitchen workflow are our three biggest concerns at the moment, and although none of them are problems we can't overcome, they're things we need to get right before we start operating at full capacity.

For example, yesterday's preparation took TWO HOURS longer than it normally would at The Cherry Tree for the same amount of food. That's two hours of valuable time lost, which means fewer fresh chips prepared and ready for service. Combine that with the challenges of working in a much smaller kitchen, where getting food out takes a little longer than we'd hoped, and you can probably understand why jumping straight into a full evening service wouldn't be the smartest move. 😂

We want to get this right, and sometimes that means being sensible, slowing things down a little and giving ourselves time to find the best way of working.

There's also another factor that we hadn't anticipated when we originally announced our opening hours.

SIX WEEKS OF DELAYS! 😩😂

When we first planned our opening schedule, we certainly didn't expect to be six weeks behind where we thought we'd be. Unfortunately, those delays have now pushed us into a period where we've already got staff holidays booked across our other businesses, which means we've got a bit of juggling to do with the team as well.

So rather than trying to force everything to happen at once, we've decided that the most sensible approach is to continue operating in our SOFT OPENING PHASE for the next few weeks, but with one very important difference…

THIS TIME, YOU'RE ALL INVITED! 🐟🍟💙

So what does that actually mean?

It's pretty simple. We'll be opening to the public as much as we possibly can, but initially on reduced days and hours while we work through the remaining operational challenges.

We'll announce our opening days and times in plenty of time so you can plan your visit without making a wasted journey. The last thing we want is somebody travelling across the island for their Chippy fix only to find the doors closed!

We'll also keep our opening hours updated across our website, Google and Facebook, so you'll always have somewhere to check before heading down.

And just to be clear, this is about our OPENING HOURS, not changing the menu. We're still planning to serve all those lovely Chippy classics we've been telling you about. We simply need a little more time to get the operation running as smoothly and consistently as possible.

At the moment, we're working towards 1st NOVEMBER as our target for moving onto the full opening schedule we originally advertised. That gives us a few weeks to fine-tune the preparation, improve the kitchen workflow, work around the staff holidays and get everything exactly where we want it.

But don't worry, you won't have to wait until November to get your hands on some proper fish and chips! 😂🍟

There'll be plenty of opportunities to visit us between now and then, and we're hoping that as each week passes, we'll be able to increase the number of days and hours we're open.

Our FIRST OFFICIAL PUBLIC OPENING DATE AND TIME will be announced very soon, so keep those eyes peeled! 👀

We know you've all been incredibly patient with us, and we genuinely appreciate it. This journey has thrown just about everything imaginable our way, and although we're still working through a few challenges, the most important thing is that we've now successfully cooked, tested and served our food from The Chippy kitchen.

And that is a HUGE step forward.

So get ready, folks, because YOUR CHIPPY IS COMING! 💙🐟🍟

SOFT LAUNCH WAS A SUCCESS – BUT THERE ARE STILL CHALLENGES AHEAD! 🐟🍟💙

YES FOLKS… WE ACTUALLY DID IT! 🎉😂

As many of you will have seen by now, our soft opening was a massive success, and after months of planning, building, delays, disasters and everything else this crazy journey has thrown at us, we FINALLY managed to get some chips in the fryer and serve up some proper Chippy food to our lovely family and friends on what was a very special evening.

And what an evening it was! 💙

The whole day was absolutely relentless, from early morning until late into the night. There was so much more to test than simply cooking a few portions of fish and chips. The setup, the preparation, the kitchen layout, the equipment, the service, the staff and all the systems and processes we've been putting together needed to be properly tested and put through their paces.

And BOY… did they get put through their paces! 😂

Although the overall soft opening was a huge success, behind the scenes there was still a little bit of drama. It wouldn't be The Chippy without something going wrong, would it? 😂

We had a problem with blocked pipes, which caused a fair bit of panic at one point, but thankfully it turned out to be exactly that — a blockage. We managed to get it cleared pretty quickly, and the crisis was over.

But the biggest challenges we discovered weren't actually with the equipment. They were with the preparation and the flow of the kitchen during service.

The preparation alone took us TWO HOURS longer than it would normally take at The Cherry Tree for exactly the same amount of food, which is obviously a concern and something we need to get on top of.

Our biggest enemy at the moment is SPACE!

We've gone from working at The Cherry Tree, where there's plenty of room to spread out, prepare food and move around, to being squeezed into a much smaller kitchen where every inch of space matters. It's a completely different way of working, and we're quickly discovering that some of the processes we've used successfully for years simply don't translate into this new environment.

We already have plans to create a dedicated preparation room downstairs, which will be an absolute game changer, but that's not something we can magically make happen overnight. In the meantime, we've got to adapt, experiment and find a better way of doing things with the space we've got.

Kelly also found the kitchen quite challenging during service, again mainly because of the lack of space. At The Cherry Tree, the preparation and cooking areas are much more spread out, giving everyone room to work independently. At The Chippy, everything is much closer together, and that naturally affects how quickly and efficiently we can get food out.

It's something we need to work on because we want to make sure we can deliver the quality of food you expect without putting unnecessary pressure on the team.

But these are exactly the reasons we decided to have a soft opening in the first place. We needed to find out what worked, what didn't work and what needed changing BEFORE opening the doors to the public.

And now we know! 👏

The REALLY good news is that every single piece of equipment worked perfectly. Not one electrical issue, not one equipment failure, and all those machines we've spent weeks getting installed and connected finally got to do the jobs they were bought for. 🙌

And the even BETTER news?

THE FOOD WAS OUTSTANDING! 🐟🍟🔥

Everything Kelly sent out of that kitchen was absolutely top tier. The quality, the cooking, the finished product… genuinely brilliant. And trust me, I'm probably the biggest critic we've got when it comes to our food, so if I'm saying it was that good, you know I'm happy! 😂

So, the big question everyone is going to be asking…

DOES THIS MEAN YOU'RE OPENING THIS WEEK? 👀

ABSOLUTELY, 100% YES! 🎉

We're just working out the best way to do it.

One thing we have decided is that while we work through these behind-the-scenes challenges, we won't initially be sticking to the opening hours we originally planned.

Instead, we're going to continue operating in a soft-opening phase, but this time with the doors OPEN TO THE PUBLIC. 💙

That simply means we'll be operating different hours while we get everything running smoothly. It doesn't mean we're changing the menu or moving away from what we've promised you. We just want to give ourselves and the team a little breathing room to get the operation right.

As soon as we've finalised the plan, we'll announce the exact opening day and times so everyone knows when they can come down.

This whole experience has been an absolute whirlwind, and judging by yesterday, the roller coaster isn't quite finished with us yet. 😂

But we're getting there, and last night was a massive step forward.
