Not just any soup — this is mama witch's kohlrabi soup 🪄, one of my absolute favorites. Weird? Maybe. Delicious? Hell, yes! 😅
Sauté shredded onion, carrots, and kohlrabi with a pinch of salt, add water, and let it simmer until everything softens. A squeeze of lemon goes in next - just a short simmer, then off the heat. Now for the finishing touch: whisk egg yolk with sour cream, then slowly temper it with a ladleful of hot soup before stirring it in. This little trick keeps the sour cream from splitting 🤷♀️
That golden color? Pure magic — shredded carrots doing their thing, deepened by the egg yolk.
Best served cold or at room temperature. Quick to make, perfect for summer. ☀️
