15 minute dinner (but only 5 minutes active cooking time): shrimp mango bowls!

Reminiscent of a poke bowl, shrimp and mango are the stars in this dish. Still, it wouldn’t be a meal without a nice bed of rice, edamame for extra protein, and LOTS of sriracha.

I added a cabbage and carrot blend with some white w**e vinegar for a little crunch and veg, and spicy mayo was the main sauce. Top with a little furikake seasoning if you like!

When I had cancer I thought all the time about all the places on my bucket list I hadn’t been to, and I swore that if I made it to remission I would prioritize seeing these places.

You can’t go wrong with a food tour across Spain, but there were certainly some highlights on our trip! 😋 I’d love to rank them, but it’s too hard. The paellas/rices probably take the cake though.

And if it's a good steak... it doesn't need that much seasoning! 😏

When I cook steak on the stove, I'll baste it with some garlic rosemary butter. Since I wanted to toss them on the grill though, I just made a separate herb butter to put on top and in the mashed potatoes.

Personally though, I liked this one with just the salt and pepper. Call me crazy!

And it's not a proper steak dinner without some potatoes and a green veg😋
