Croquetas De Atún Y Manchego

Always on the lookout for new things and when most people think of croquetas it's invariably ham, as they are the most widely available.

But we found these on our hunt for different things. Blue fin tuna harvested from the Atlantic and Mediterranean around Cadiz and the straights of Gibraltar is some of the best, and here it's combined with manchego cheese to form these delightful tuna and manchego croquetas.

Despite misconceptions, there are plenty of vegetarian options for tapas lovers; this was just one of them.

Definitely one for you seafood lovers - necora or velvet crab.

These small crabs are found from the North Sea to the Western Mediterranean in inland waters and rockpools.

Prized by seafood lovers for their exquisite taste they are the perfect size for tapas and need nothing more than a little lemon juice or a good dollop of alioli.

One of the rare, delicate seafoods that are not expensive, give them a try. We discovered them on our Market Tour, but they are available at many tapas bars or to try them at home, simply go to the frozen seafood section of any good supermarket and you'll find a box at very reasonable prices.

Chuletas de Cordero Lechal

This sharing platter of milk-fed baby lamb chops with Spanish inspired chimichurri was just delightful.

These lambs are typically slaughtered when they are between 21 and 35 days old, with a maximum weight of about 9 to 12 kilograms.

They are never weaned, meaning they eat only mother's milk, which gives the meat a distinct, delicate flavour and tender texture. The meat is pale pink or white in color, very tender, and juicy, with less fat than older lamb and is traditionally roasted in clay pots in wood-fired ovens.

Huevos a la Flamenca, known in English as Flamenco Eggs, this is a full-on Spanish experience.

The dish of tomatoes, chorizo, pimenton and perfectly cooked eggs is a delight. The peppers, chorizo and tomatoes are fried, transferred into individually-portioned earthenware dishes, topped off with a couple of eggs and baked in the oven.
