Most winemakers inherit a method. Pepe Marin invented one.

Seven years of research alongside the Universidad de Alicante went into a single question: what does the sea actually do to a bottle of wine? Not as a gimmick, not as a story for the label — as science. How deep. How long. What the pressure does to a tannin. What the constant, slow movement does to a wine that would otherwise sit dead still in a cellar.

What came out of it was Bodega Submarina del Mediterráneo — the first winery in the world to develop a proper oenological method for maturing wine underwater. Not sinking bottles and hoping. A method.

The wines have collected the awards since. But the more telling detail is this: wineries around the world now fly him in to ask how it's done.

And on Friday evening he is standing in our shop in Moraira, pouring them himself.

That's the part worth pausing on. You can buy an unusual bottle any day of the week. What you almost never get is the person who invented the way it was made, in the room, opening it in front of you, and answering whatever you'd like to ask.

He's bringing five wines — this year's new releases, only just out, untasted by anyone on this coast. Among them CH01, a Champagne matured beneath the Mediterranean, which as far as anyone knows has never been opened anywhere. And the Auctoritas Ígneo 2023, volcanic Lanzarote fruit taken down to the seabed — a combination almost nobody in the world has attempted.

He does this for us once a year.

Isabel Salgado didn't put a picture on the front of Siah 2024 to look pretty. She put a different piece of Galician seafood on every bottle — octopus, velvet crab, scallop, lobster, prawn, sea bass — drawn in fine mosaic work in turquoise, coral and violet.

Between the six of them, they're more or less the menu this wine was built for.

The wine itself is very good indeed. A Galician white from thirty- to fifty-year-old vines in Leiro, on the slopes above the Avia river, where the Atlantic comes up the Miño and cools everything down. Treixadura, Godello and Albariño, hand-picked, fermented in French oak foudre and left nine months on its lees. Straw gold, white flowers on the nose, mineral and generous at once, and a finish that goes on considerably longer than €22 bottle has any business doing.

We run a tasting most weeks. This is not one of those.

Once a year — once — Pepe Marin gets in his car, drives up the AP-7, and brings Martha's Vineyard the wines he has spent the previous twelve months ageing on the floor of the Mediterranean.

This Friday is that once.

Twenty-four metres down, off the Alicante coast, his bottles sit in the dark for the best part of a year. No cellar. No lights. Nobody turning them. Just the sea — steady, cold, and never still. Then somebody dives down and brings them back up.

He is opening five of them here on Friday, and here is why there is no second chance at this:

The vintages have only just been released. Nobody on the Costa Blanca has tasted them. Not a shop, not a restaurant, not another wine bar. This is genuinely the first pour.

The production is tiny. These wines are made in numbers so small they mostly never reach a shelf at all. You can't decide in October that you'd like to try one.

And the CH01 — a Champagne matured beneath the Mediterranean — Be the first to experience this amazing wine. What the sea does to a bubble that fine, we are all going to find out together at six o'clock on Friday.

Some wines are made in a cellar. These were made in the sea.

Twenty-four metres beneath the Mediterranean, an hour up the coast from here, there are bottles of wine sitting in the dark.

Nobody is refrigerating them. Nobody is turning the lights off. Nobody is turning the bottles. The sea is doing all of it — holding the temperature steady all year round, pressing on the glass with the weight of twenty-four metres of water, keeping out every last scrap of light, and rocking them gently, without ever stopping, for the best part of a year.

Then somebody dives down and brings them back up.

On Friday 4 September, the man who put them there is coming to Moraira to pour them.

Pepe Marin spends most of the year on aeroplanes, consulting for wineries around the world on what underwater ageing can do for their wines. For one night in September, he leaves the airports alone, points the car at the AP-7 and drives up here instead.

He's bringing five submarine-aged wines — the new vintages, only just released, and this is the first chance to taste them anywhere in Spain. Including something we don't believe has ever been opened anywhere: CH01, a Champagne matured beneath the Mediterranean.

There's also the brand-new Auctoritas Ígneo 2023 — volcanic fruit off black Lanzarote rock, then straight down to the seabed. Volcanic soil and deep water is a combination almost nobody in the world has tried.

Pepe always arrives with a surprise bottle, so we're every bit as curious as you are.

Monday. Four of the best winemakers in Spain. One room.

Isabel Salgado is coming from Rias Baixas. Begoña Jovellar from Rueda and María del Yerro from Ribera del Duero. Mara Baño is driving down from Jesús Pobre with her amphora-fermented Moscatel — gold medal, best wine in Alicante 2025. I

They'll each pour the wine they're proudest of and tell you exactly how it got into the bottle.

There are sixteen seats in the room and only a handful still going.
