"Today we will talk about Manzanilla Barbiana en Rama. This manzanilla comes from the soleras of Rodríguez La-Cave, which were preserved after the merger of the two wineries. It is a Palomino single-varietal, whose grapes come mainly from the pagos (estates) of Balbaína and Miraflores, with their characteristic albariza soils. After fermentation and subsequent fortification, the wine undergoes an average aging of about five years under flor in old American oak casks, following the traditional Jerez method of soleras and criaderas. It should be clarified that this is a manzanilla bottled en rama, meaning it is unfiltered and unclarified.
Manzanilla Barbiana en Rama shows a clear and without any cloudiness lemon-yellow color in the glass. On the nose, we find citrus peel, yeasts, and notes of honey, flowers, and bakery. On the palate, it has very good acidity and a sharp entry with an intense, saline, and not too long sip. It is a wine that you never tire of drinking and can be the perfect ambassador for those who still look askance at the fortified wines of the Jerez region."
