OVAL, is made by only unripe olives yields less juice but also conserves the natural polyphenols found in olive oil, it's means, health benefits galore. Polyphenols are antioxidants that occur naturally in olive oil. Studies have shown that polyphenols have anti-inflammatory qualities, also contents higher chlorophyll and more vitamines.
Thus, ripe olives bring a lot of oil, but little health aspects, so our olives are harvested green and unripe to get the best benefits.
