Yesterday, We had a perfect day pouring our Beers in the 13th Century Town Square of sunny Santa Pau, Catalonia. Wow! Cheers to everyone who drank our Beers & chatted. Huge thanks to Dani and the rest of the team for making a beautiful Festival in such unique & wonderful setting. We are very grateful for the invitation to pour our beers alongside such amazing producers. 🍻☘️🍾

🇧🇪 B R U X E L L E S 🇧🇪

As always, an amazing time was had in Brussels. The lovely folks welcomed us for a collaboration brew. Merci to Henri & Nacim and the rest of the crew for their hospitality (the beers & pizzas were beautiful).

We hit up the usual spots for day time bottle pours. We got to for their Oktoberfest party. We also went to too - loads of amazing beers & breweries there but I think Cuvée Heritage was the best beer I had. Lots of other superb beers of course but that one has been in my mind since Saturday. Great job Senne!

Great to catch up with our Belgian & Swiss based friends for drinks & chats. Cant wait to get back again. Santé! 🍾

Last weekend we had the pleasure & honour of pouring in Tuscany. Thanks to everyone there for the warm welcome & enthusiasm for our beers. Goodbye 2022!

It was a long & challenging year but lots of great stuff happened. Lots of family time. A couple of new beers bottled, lots of blends went on and off of fruit. Lots of beer festivals. Some bumps in the road too but that’s life. Excited for 2023!

B X L B E E R F E S T

Last weekend we did a quick over & back to Brussels for . What a festival! Flew Saturday morn. Landed. Train from airport to town. E scooter to the venue. Effortless.

We poured a bunch of our next releases for the over 5000 visitors to BXL. We debuted our “gueuze style” blend aswell as a couple other spontaneous beers aged on different fruits. (We haven’t received any death threats from Horal, yet 😁) We also poured a homebrew Cherry Wine which was very well received by the beer crowd.

Jokes aside, this was the best ran festival I’ve ever attended or poured at. The scale, the space and the sheer amount of it, the natural light, the clean glassware! And of course the range and choice of the brewers and blenders from around the world.

I didn’t take any pics the whole weekend. Instead, here is a selection of pics we were tagged in. Thanks to everyone who chatted & drank our beers. Cheers to for handling the import. Thanks to for the place to stay & massive thanks and respect to for the invite.

Massive thanks to & for inviting us to pour are their wonderful festival. Superb! Thanks to all who drank our beers & chatted. It was great to see so many we’ve not seen in so long. Cheers to & for helping me pour. Some weekend! Bualadh bos to all who made Fidelity!

Big thanks to for a tour at St James Gate. We’ve always wondered what was behind those walls. It was great to see it all up close 🍻

Our final release for 2021 is a collaboration with Hannah & Shane are famous for their sourdough bakery & soon to be famous for their Qvervi fermented Ancestral Method Ciders.

HARD GRAF is a blend of L&L spontaneous fermentation beer with pressed Armagh Apple Juice blend of 50% Lord Lambourne, 20% Laxton Superb, 20% Katy & 10% of an unknown variety.

This Graf cider blend co-fermented & evolved in neutral wine barrels for 18 months.

Notes of Rosemary, Sage, Dried Black Limes & a layer of smokey Mezcal. A little challenging but rewarding bottle that is truly unique & pleasantly weird! Bottled on 18th April 2021.

375ml & 750ml bottles
5.6% Alc Vol.

Thanks to everyone who bought our beers this year. We’ve lots of special beers maturing & evolving for 2022 & beyond. Looking forward to sharing them with you all! 🍾🍾❤️

We’ve two new beers to close out 2021. Both are collaboration beers. Both are very different but equally as enjoyable.

LUSTRE - APRICOT 🍑

Lustre - Apricot is a collaboration with our good friend Jordan Keeper In July 2018 Jordan came to Galway & we brewed a Saison with a turbid mash, hopped heavily with HBC341 hops. It fermented & evolved in our foeder over 21 months with a mix of both of our house yeasts.
In April 2020 we added 300 grams per litre of Apricots before bottling it on the 15th October 2020.

375ml & 750ml bottles.
5.8% Alc Vol.

C R I M S O N 🍒🍒🍒

Crimson is our kriek framboise blend. We aged 1 year old spontaneously fermented beer on 830 grams per litre of sour cherries for 6 months. Before bottling we blended another Spon beer aged on 300 grams per litre of raspberries with the cherry beer. The final assemblage of 75% Cherry beer & 25% raspberry beer transcends both their individual selves.

This beer has an Incredibly intense fruit character that is so much fun! It honestly blew us all away from such an early stage during the maceration stage. So we decided not to mess with the fruit saturation by further blending more aged beer before bottling (standard practice ). By not blending back we’ve maintained its incredibly high fruiting level & have managed to preserve all the fun & intensity of these beautiful fruits in each bottle. Even after 6 months bottle conditioning it’s as vibrant now as the day it went in! 😍
