I don’t usually treat myself and sometimes I forget how important this is. I work very hard, I’m in the food and wine industry and hardly get to experience a night out, as a solo diner and treat myself to a tasting menu.

After speaking to my regulars and friends, I caved in and experienced a meal that feels familiar. When I get wine home sick, I always think of Spain, my third home. It’s always comforting to revisit the region, share stories with people and meet exciting wines paired collectively by a group of talented individuals in order to showcase Galicia at its best capacity.

The dinner, did not disappoint. What a great time was spent.

I don’t even have to wear my pins 😩

The textbook, ego, and accolades don’t make a good Sommelier. It’s the abilities to find your original approach to this thing called wine. This industry has always been competitive, even in working environments, it can be the hunger games. I do like ambition, I do like motivation, but I’m real sure of who I am when I approach a guest and aware of my surroundings.

Be humble. Be real.

Favorite moments (sound on 📢) during any wine harvest is learning from the people behind the wine, the farmers, the contadini, the people that put in the hard work.

This was in Mount Etna, I enjoyed learning their local Sicilian dialect to communicate with them, loved sharing lunch around them, listening to their stories.

Celtic Spain 🇪🇸 🍀🍷

After reading a certain article promoted into the feed, I had to dig into my archives and speak about E Bierzo region. This medieval region has a rich history. Their wine culture can be traced to ancient Roman civilization.

My personal story is tied to Pétalos, the entry-level wine of Descendientes de José Palacios. This project started with Álavaro Palacios and his nephew Ricardo Pérez Palacios lured by Raúl Pérez “the king, el jefe, the giant” he’s the one who welcomed the idea of showcasing the region’s potential since the 1990’s.

Today, wine lovers from around the world know of Mencía, Godello, even Palomino Fino is often found in these centennial vineyards. It might be “under the radar” to some. But let’s not discredit the long history of efforts in the region.

It has reached to a highly acclaimed podium with accolades, including a ceremonial tasting during the wine experience 2013 when Álvaro led a rare tasting of Las Lamas, La Faraona, wines.

Bierzo is Celtic Spain. If you ever been there then you’ll understand its charm.
