By 2021, It had come to our attention to start a wine business, however it was a spontaneous idealisation with a simple objective in mind. we are a father and daughter who had the spontaneous idea of creating a wine business from scratch who adding to the fact has no idea on how the professional world of the winery is. Which is why we came with the idea to create it into a concept that open to everyone who had the interest to follow us into our journey and help us.

Para 2021, nos había llamado la atención iniciar un negocio de vino, sin embargo, fue una idealización espontánea con un objetivo simple en mente. Somos un padre y una hija que tuvieron la idea espontánea de crear un negocio de vino desde cero que, además del hecho, no tiene idea de cómo es el mundo profesional de la bodega. Es por eso que vinimos con la idea de crearlo en un concepto que estuviera abierto a todos los que tuvieran el interés de seguirnos en nuestro viaje y ayudarnos.

What are wine tannins?
Tannin is a naturally occurring polyphenol and polyphenols are macromolecules made of phenols: complex bonds of oxygen and hydrogen molecules. (Yep, wine is science!). The term “tannin” comes from the ancient Latin word for tanner, and refers to the use of tree bark to tan hides

El tanino es un polifenol natural y los polifenoles son macromoléculas hechas de fenoles: enlaces complejos de moléculas de oxígeno e hidrógeno. (¡Sí, el vino es ciencia!). After the harvest, grapes head to the winery. The winemaker decides whether or not to remove the stems or to ferment grape bunches as whole clusters.This is an important choice because leaving stems in the fermentation adds astringency (aka: tannin) but also reduces sourness.During this step, grapes also receive sulfur dioxide to stop bacterial spoilage before the fermentation starts.

Después de la cosecha, las uvas se dirigen a la bodega. El enólogo decide si eliminar o no los tallos o fermentar racimos de uva como racimos enteros. Esta es una opción importante porque dejar los tallos en la fermentación agrega astringencia (también conocida como tanino), pero también reduce la acidez. Now during the process of collecting wine grapes it is most important to know when to collect them. As grapes that are picked too early may result in tart and thin tasting wines. Whereas grapes that are picked too late may result in wines that taste overly ripe. Which makes the grape harvest season the most critical time of the year.

Ahora, durante el proceso de recolección de uvas de vino, es muy importante saber cuándo recogerlas. Como las uvas que se cosechan demasiado pronto pueden dar lugar a vinos agrios y de degustación fina. Mientras que las uvas que se cosechan demasiado tarde pueden dar lugar a vinos que saben demasiado maduros. Lo que hace que la temporada de cosecha de uvas sea la época más crítica del año.

We want to finally announce that we will be collaborating with Barahonda] for the production of our wine El Calvo. Barahona who is one of the greatest companies in the wine industry in the south of spain also known for their Barahonda wine and many more will be bottling the grape and storing it until it's finally ready. We couldn't be more pleased to work with such a great company for the production of our wine.
