First of all, words cannot truly express how much we appreciate this wonderful gentleman. Khan Lam Yuot

Mr. Khan first came to our food stand as a regular customer, just looking to grab a bite to eat and continue with his day. But that was the moment everything changed for us.

He ordered a plate of our fried potato chips with avocado—which we proudly consider the most delicious and healthy meal we offer. We served him with the utmost love and respect. Mr. Khan truly enjoyed his food, and after paying his bill, he looked at us and said, 'Guys, the food is amazing. I really enjoyed it.' Then, he offered something that blew us away. He asked if he could create an advertisement for us, since he enjoys sharing great local spots with his audience. We were deeply touched and happily agreed.

The very next evening, right as we were setting up our shop, Mr. Khan pulled up exactly on time. He went straight to work, filming and executing his assessment flawlessly, just as he had promised. We are incredibly moved by his selflessness. His kindness and genuine support have brought so much joy to our hearts.

When my cousin and I first started cooking chip butties on the street, (I’m not gonna lie), my head was spinning with all kinds of worries and overthinking.

One thought that was messing with me big time was the fear of being judged, especially by girls.

I kept picturing people walking by, whispering, "Look at him, frying potatoes on the roadside... he must be broke or got zero support back home."

I worried about the silly stigma, I worried people would mistake a humble street setup for a lack of ambition, and I wondered if I was making a fool of myself.

But then I had to take a deep breath and check my own reality.

I’m literally a business student at one of the top private universities in Addis Ababa! My family supports me, I’ve got a great setup, and I have every advantage someone my age could ask for. So why was I letting insecurity get in my head when I already have what others have?

As a business guy, my whole mindset is simple: see an opportunity, go after it, and put money in the pocket.

My cousin and I carried out our own market research, checked out Gambella, and realized that nobody was really doing proper Chip Butties and great tea.

So I thought: Why not us? Why not now?

So I tossed all those worries in the trash and just started.

I wasn't gonna let pride hold me back from building something real. People can talk all they want, but at the end of the day, they won't have the grind, the courage, or the paycheck I’m building unless they jump into the game themselves!

And honestly? If men from other nations and tribes can come here, roll up their sleeves, and build businesses from scratch, why can’t a Nuer man do the exact same thing?

There is zero shame in hard work. A Nuer man should be proud to hustle, build, and try new things.

Like Koang Kay said, we must do all kinds of work.

There is no place for pride when it comes to honest labour.

Thanks, everyone, for supporting our humble beginning.

Seeing you guys pull up every evening, smile, and love the food makes every single second of prep worth it.

Day 05: Conversations at Emin’s

Every day brings new faces, great conversations, and moments that make all the hard work worthwhile. Here are a few favourite exchanges and reviews from our lovely customers in day 05 operating:

Customer 01: Honestly, I don’t have anything to recommend fixing. You can actually just give us more of it!

(We love knowing our Chip Butty hit the spot just right!)

Customer 02: Your Ertib is very good, tasty, and delicious! Bring us another round!

Customer 03: You said,'No one eats alone at Emin’s,' so here I am!"

Emin's: You’re always welcome here. But unfortunately, we just sold out of Chip Butties and are wrapping up for the night.

(We felt so bad, but we"ll stock up even more for next time!)

Customer 04: Where were you yesterday? We’ve been waiting for you for centuries!

Emin's: We apologize for missing you! Yesterday was Sabbath, so we paused operations to spend holy time at church and rest with the Lord.

Thank you to everyone who stopped by, shared a laugh, or grabbed a bite.
