It began with a shift in light.

I had just started working with , creating Matcha Yuzu truffles from their bright, green tea — a summer kind of flavour.
But as the days dimmed, something warmer was needed.
•
Hojicha appeared as the answer: roasted, woody, understated.
Blended with Bolivia 45% wild cacao milk chocolate, it created a calm, enveloping flavour, something that felt immediately right.

And so the Hojicha tablet emerged —

Some time ago, I was surprised to discover that even my regular customers, who truly enjoy my pâte de fruit, didn’t realize why it tastes so fresh or how the fruit character is preserved. Since a one-line answer wouldn’t do it justice, here is my short explanation (well, short for me…).

I like to think of each collection as a story told in flavours.
•
I usually build them around the seasons: berries for late summer, apples and pumpkins for autumn, spices for Christmas. That’s how the blueberry truffle was born 5 years ago — it became number two in my line, and so many of you wait for it every year. (first on the left)
•
For me, a collection is a dialogue of flavours. Nut pralines pair great with vibrant berry truffles, while intense dark chocolate truffles are complemented by orange caramel, creating contrast, depth, and texture. And once I have two pralines, the real play begins — sometimes I bring back an old favourite, sometimes a new ingredient appears and leads to something unexpected.
•
In the end, I make them, pack them, and deliver them to your door.
All that’s left is for you to enjoy.
