Applying for pastry chef jobs brought up a need to tinker, fiddle and faff 🤪 It's (almost) spring here in Finland so springy, tangy and bright flavours were called for.

Presenting: Lemon Curd Mousse / Licorice Caramel Heart / Ginger Turmeric Sesame Cake with a dash of Tahini

Very yummy, yes oh yes. Quite shiny, yes of yes. Lots of learning and tweaking of recipes. And yes, of course the Most Perfect mirror glaze did not coincide with the Most Even cake base but a crooked one. Such is life. Still ate it. Still loved it ♥️

Kevät toi kevät toi kondiittorityöhaastattelut ja niiden innoittaman tarpeen pipertää. Tässäpä siis: Lemon curd -mousse / Laku-toffee sydän / Inkivääri-kurkumakakku paahdetuilla seesamin siemenillä ja sipaisulla tahinia

Hyvää ja kaunista. Paitsi että täydellisesti mirror glazettu leivos ei tietenkään ollut se jossa oli täydellinen, suora pohja. Vinkkuralla mentiin, eipä paljon hidastanu ♥️

With 3 weeks to go until The Day, I finally got around to making the first tryout version of .table lemon meringue pie that's (hopefully 😅) going to be one treat served at our wedding. The pan I ordered was defo smaller than it should have been which presented its own set of problems and the +27 degree kitchen paired with dough that's supposed to be chilled was not the best combo but I learned things and the pie was damn yummy so there ♥️

Somehow all the baking related prep has been the most heavily procrastinated 🙈 Still need to make macarons work (almost there I think), maybe this weekend will be the right time for that. Send happy and macaron friendly thoughts this way please 🤣

Ah macaron, tuo herkkupaloista jaloin ja ehkä ärsyttävin 😅 Oli aika (joskus kakskymppisenä) kun loihdin näitä poikakaverin pikkuveljen lakkiaisiin ilman huolen häivää, sen jälkeen kaikki menikin pieleen, kunnes kävin siitä noin vuosikymmen myöhemmin oikein jonkun kurssinkin Berliinissä (kotiuunin kanssa en onnistunut senkään jälkeen) ja nyt TAAS vuosikymmen myöhemmin päätin, että en suostu olemaan ihminen, joka ei osaa tehdä macaronseja.

Siispä hommiin. Nyt alkaa jo olla joku pieni käsitys siitä, mitä tästä pitää vielä viilata että ensi pellistä saa käyttöön enemmän kuin neljä kuorta 🙈

Että kyllä tämä tästä! Kohta postaan ehkä kuulkaa jo kuvan tasamuotoisista valioyksilöistä, jonka välissä oleva vadelmacurd on kesytetty eikä tursuileva 😅

Ah macarons, the delicate little Bastards. Gotta love them and also really REALLY hate them at times. After a long history of occasionally nailing them but more often failing them, I decided that I refuse to be a person who cannot make macarons. Just, like, NO.

So, to it then! Not quite there yet but starting to get an idea of what needs to happen for them to work out next time. Stay tuned! 😅

Ps. The unruly raspberry curd was delicious! 🥰

Oodi veriappelsiinille!

Tammikuu on muutoin kuukausista ankein, m***a yksi hyvä puoli siinä on: veriappelsiinit ♥️♥️♥️

Tässä leivosleikin tuloksessa on ruskistettuun voihin tehty blondie-pohja, veriappelsiinicurd-sydän, jogurttimoussea ja päällä veriappelsiinikiille. Ja voin kertoa, hyvää on. Näitä menee naamariin aika ahmimistahtiin 🙈😋🥰

Kyllä tästä keijusta vielä kondiittori saadaan.

Ode to the blood orange!

Ah my favourite citrus, pretty much the only reason not to dislike January. This beauty consists of a browned butter Blondie base, blood orange curd heart, yogurt mousse and a blood orange gel. So amazingly yummy and fresh that I've pretty much already gobbled up the whole batch 😅😋♥️
