Guest Chef at Restaurant Kakolanruusu

Juho Ekegren is a prominent Helsinki-born chef and restaurateur celebrated for his dedication to sustainability and zero-waste gastronomy across Finland and Denmark. He built his culinary foundation in Helsinki’s elite kitchens, refining his craft at prestigious Michelin-starred establishments including Olo, Chez Dominique and Ask.

In 2017, Ekegren co-founded Restaurant Chapter in Helsinki's historic Torikortteli neighbourhood. The establishment quickly took the Finnish food scene by storm, earning the coveted “Restaurant of the Year 2019” award for its radical eco-conscious philosophy, which seamlessly combined urban farming, house-made ceramics and innovative zero-waste tasting menus. Following Chapter's success, Ekegren moved to Denmark to become Head Chef at Popl Burger in Copenhagen, the highly acclaimed casual dining venue created by Noma alumni.

Restaurant Kakolanruusu is situated in one of Finland’s most fascinating locations – the historic premises of the old Kakola prison.

The restaurant serves high-quality, seasonal, handcrafted food cooked over an open fire. Kakola’s “Feast” and “Big Feast” have become iconic – social dining and shared dishes are what we’re all about.

On Fridays and Saturdays, guest DJs set the mood while you dine, and in our lounge bar, artisan cocktails stand in a league of their own.

Guest Chef at Restaurant OOBU

Friðgeir I. Eiríksson is the owner and head chef of Eiriksson Brasserie, widely known for his contributions to Icelandic gastronomy.

With a father who spent his career as a chef in Iceland, it could be said that Friðgeir was born into the kitchen. He served as head chef at the Michelin-starred Domaine de Clairefontaine in Lyon, France. In 2007, he represented Iceland at the Bocuse d'Or and has since played an active role in shaping the country’s culinary scene, including leading the kitchen at Hótel Holt in Reykjavík.

The menu at Eiriksson Brasserie is European in style, with a particular focus on Italian and French cuisine. Guests can enjoy a relaxed atmosphere – whether it’s a delicious lunch or an evening at the bar with a glass of EIRIKSSON Kaldi, a beer brewed exclusively for the brasserie.

INTRODUCING: Daniele Coccia (IT) 🇮🇹

Guest Chef at Restaurant Karu

Daniele Coccia was born in Tropea, Italy, in 1990. He developed a deep passion for Japanese cuisine and culture at a young age, which led him to move to Japan to study traditional Japanese culinary techniques and seafood processing. During his time there, he also trained and studied at the historic Tsukiji Fish Market in Tokyo.

In 2021, he returned to his hometown of Tropea and opened Waku Waku Omakase, an intimate Edomae-style omakase chef’s table where he focuses on sharing authentic Japanese cuisine and culture through seasonality, fish aging techniques, fermentation and a dialogue between Japanese tradition and Mediterranean seafood.

INTRODUCING: Christopher Lai (SE) 🇸🇪

Guest Chef at Restaurant Hotel Kakola

Michelin-starred chef Christopher Lai is a renowned figure in the Nordic culinary scene and currently serves as Food and Beverage Manager and Culinary Leader at Bjertorp Castle, Sweden. Completed in 1914, Bjertorp Castle is the youngest Art Nouveau-style castle in Sweden. It offers an exclusive setting for celebrations, meetings, or a peaceful retreat to enjoy first-class food and a unique environment.

In 2020, Christopher founded the fine dining restaurant Lago in Ulricehamn and acted as Ulricehamn City ambassador from 2021 to 2023. Since 2024, he has been one of only two Swedish chefs teaching at Scoolinary, the world’s leading online culinary school featuring top chefs from around the globe.

As the Team Leader of the Culinary Team West of Sweden, Christopher led his team to a gold medal. He has competed three times in Sweden's Chef of the Year (Årets K**k), consistently ranking in the top 10.

In 2026, Christopher was recognized at the Falstaff Nordic Awards. He also serves as an Ambassador for Bragard France, further reflecting his standing and influence within the international culinary industry.

Christopher’s work has been recognized seven times in the White Guide and twice in the 360° Eat Guide, and he has been featured widely in the media, including television, radio, print, and digital platforms.

Once, people were sent here. Now, they come here.

Hotel Kakola is one of Finland’s most unique hotels. It is an experience set in a former county prison, where a colourful history meets modern hospitality.

Built in 1890, the county prison was given new life as a hotel after the prison closed. The history of the place is still very much present, but life within these old walls has entered a new era. This privately owned family hotel places a strong emphasis on personal service, local character and responsible choices.

Breakfast is an important part of a great hotel experience. Hotel Kakola’s generous breakfast buffet is served every day. Our breakfast is made with pure, high-quality ingredients and changes with the seasons, with local produce and Finnish ingredients taking centre stage. We favour local producers and the best ingredients each season has to offer.

Here, the past can be seen in the walls, history lives on in the stories and the most important meal of the day is something to savour.
