🎬 3 little-known facts about winemaking:

1. “Free-Run” First: Did you know the highest quality juice, our “free-run,” flows naturally from the grapes before any pressing occurs? This gentle extraction forms the delicate base of our finest wines.
2. Gentle Pressure is Key: We use pneumatic presses that inflate like balloons, applying incredibly soft, controlled pressure. This minimizes bitter tannins and preserves the fruit’s pure aromatics, unlike harsher traditional methods.
3. Sustainable Second Life: Our commitment to sustainability extends beyond the bottle. After pressing, the leftover grape skins (pomace) aren’t wasted! They are used as natural compost to enrich soil.

🇬🇧From grape to glass, every step is deliberate. We are pleased to announce that the décuvage (devatting) and pressage (pressing) are complete for our 2025 vintage.
This crucial stage marks the end of fermentation, where we gently separate the free-run wine from the grape skins. The skins are then pressed to extract the remaining juice, rich in tannins and color.
Our team has worked meticulously, ensuring the integrity of our organic fruit at every moment.
The new wines are now resting, ready to begin their élevage (aging). Some will develop in French oak barrels, others in our signature terracotta amphorae.
The promise of an excellent vintage is clear.
🇫🇷Du raisin au verre, chaque étape est cruciale. Nous sommes heureux d’annoncer que le décuvage et le pressage sont terminés pour notre millésime 2025.
Cette étape fondamentale marque la fin de la fermentation, où nous avons délicatement pressé les raisins pour extraire le jus restant, riche en tanins et en couleur. Notre équipe a travaillé méticuleusement, assurant l’intégrité de nos fruits à tout moment.
Les nouveaux vins sont maintenant au repos, prêts à commencer leur élevage. Certains se développeront dans des fûts de chêne français, d’autres dans nos amphores en terre cuite signature.
