The trees are in full blossom. A new form, full, happy. A reminder of why we do this.
We walk the fields every day, watching the small changes. Nature teaches patience. In a world of next-day delivery and out-of-season food, we chose to live in a more intentional way.
This is how farming should be. How nature intended it.We live by her rules, not our own, a refreshing change.
We hope you feel it in the taste of our oil, in its smell. Our farm, in a bottle.

We’re a small team with deep roots — some born right here near Querubi , others drawn from Spain, Portugal, Holland and the UK. What unites us? A shared love for soil, our olive trees and a commitment to natural farming. No shortcuts, no chemicals — just years of care, knowledge and hard work.

Gilles- Born and raised at Domaine de Querubi. Gilles runs operations across both estates and masterminded the rebuild of Domaine Madrona. A man of action and very few words, exactly who you want keeping everything on track.

Juan-Jose - Originally from Andalusia, Juan-Jose grew up surrounded by olive trees and brought 15 years of deep olive-growing expertise to Querubi. He’s our pruning perfectionist and the person who ensures every tree gets exactly the attention it needs to thrive organically.

Rudy - who joined us seven years ago and never left. Lives on the farm and treats every tree with extraordinary care. His knowledge of the land, the seasons and the ecosystem around our groves is invaluable to how we farm.

Vitor - From Portugal, with us for six years. Vitor brings tireless energy to everything from grove maintenance to building work. Always cheerful, always reliable even in the toughest months of winter.

Helene - Local roots with Andalusian heritage. Helene keeps both the Querubi and Madrona households running, manages local olive oil sales, and is the warm welcome behind every visit to the domaine.

Willem - From Holland, Willem left the corporate world behind to start Querubi and build something rooted in the land. He oversees the farming philosophy, the organic certification process, and the constant pursuit of producing the best oil we can.

Holly - From the UK, now a decade in France. Holly handles international sales, the manager of Domaine Madrona, and just about everything else we throw her way — including, when needed, the tractors.

We’re proud of what we grow and how we grow it. This is the team behind every harvest.

We are often reminded that in the face of nature, we are ultimately powerless. It is a truth that can sound abstract — something distant from everyday life. Yesterday at Querubi, it was anything but distant. At 10:15 in the morning, an extreme wind gust of 180 km/h swept across the farm. In less than thirty seconds, nearly 900 of our beloved olive trees were uprooted. Olive trees are known for their strength and resilience, but once their main root system is damaged, they cannot survive.This comes 18 months after the firestorm of September 2024, fueled by prolonged and unusual drought , which destroyed approximately 1,200 of our trees. Once again, we find ourselves facing the harsh consequences of increasingly extreme weather conditions.

We were sheltering in a nearby hangar when we saw the gust approaching across the land. Within half a minute, parts of the orchards were flattened before our eyes. In moments like these, there is nothing to do but witness the force of nature. It is humbling and sobering. We will take a bit of time to absorb the sadness of what happened. Each tree represents years of care, patience and quiet growth. But we are farmers. Setbacks are part of this life, even when they arrive with such force. Our commitment to the land and to our orchards remains unchanged. We will mourn for a bit, but then we will be back in the orchards, removing the flattened trees, preparing the soil and replanting new ones.

This month’s newsletter is out, and we’re looking at why truly fresh extra virgin olive oil is such a powerful health ally.

That “scratch” at the back of the throat comes from a natural anti-inflammatory discovered by American sensory scientist Gary Beauchamp in 2005. The higher the quality of the oil, the higher the oleocanthal, and sadly most supermarket oils don’t make the cut.

Our 2025 Querubi harvest tested at just 0.08% acidity with polyphenols over 600 mg/kg. That little sting? It’s the science working.

Domaine de Querubi is an olive farm rooted in a land where breathtaking natural, unspoilt beauty meets centuries of rich history. Nestled in the heart of the French Pyrénées-Orientales, this rugged region is shaped by wild landscapes, a gentle climate and a people as proud and resilient as the land they inhabit. Here, beneath the watchful gaze of the majestic Canigou, the spiritual heart of Catalonia, the essence of life in this unique corner of the world unfolds.

Drawn by its untamed beauty and the promise of a simpler way of life, we acquired Domaine de Querubi in 2005. Amid its never-before-farmed soils, we discovered an abundance of flourishing wild olive trees. This encounter sparked a vision: to transform this untouched land into an organic olive estate, guided by the most rigorous ecological principles.

In 2008, we planted 12,000 young olive trees with a single, ambitious goal, to create organic olive oil of the highest quality. The years that followed were marked by dedication, patience, and respect for nature’s rhythms. With a small but passionate team of local organic advocates, we nourished our virgin soils with natural composts, installed solar-powered underground irrigation systems and gently shaped the thriving orchards from the nurturing soils.

From the very beginning, we have been committed to a single principle: never to use synthetic fertilisers, herbicides, pesticides, or any other agricultural chemicals. By avoiding synthetic chemicals, we aim to protect the delicate balance of our soil ecosystems and ensure sustainability for future generations.

We strongly believe that by allowing our trees to grow in their own natural rhythm, unstressed by chemical inputs, we can harvest fruit of exceptional quality, capturing the true spirit of this extraordinary land in every drop of oil.

Harvest is always hard work, but with plenty of joy in it - rhythm, good food, and the daily excitement of the olive weigh-in.
We’re proud of what’s in the bottle, and of the hands that made it, every role connected, just like the land we farm.

Rudy, Juanjo and their teams working the groves with skill and calm. Holly and Willem with a steady flow of collect, wash, cool, repeat. Helene and Tiphaine cooking the delicious lunches that keep the whole day moving.
And Gislain, always there when something needed mending or adjusting.

Every role different, every role necessary.
