A fun little project with some friends at on Île de Ré: creating a bespoke peppermint liqueur!

It’s bright, fresh, and minty—perfect as a digestif after a Christmas meal or to line up for spring, served with soda water for a light, refreshing aperitif. Its vibrant menthol notes are balanced by the herbal chlorophyll that gives peppermint its incredible depth of flavour.

Before synthetic medicines, peppermint was a vital ingredient in many herbal remedies. In France, its cultivation was historically centered in Milly-la-Forêt, near Paris. Today, only a handful of growers continue this tradition—and we’re proud to source our peppermint from there.

For the past few years, we’ve had the privilege of collaborating with two incredible talents: and .

Today, we’re thrilled to share the next stage of this journey—our new limited edition gin. Crafted with Calabrian bergamot, juniper, roasted fig leaves, and grilled buckwheat (sobacha), it’s a subtle yet complex creation. Vibrant top notes of juniper and bergamot are distilld, while macerations of sobacha and fig leaves add depth, an amber hue, and rich toasted undertones.

This gin is available in limited quantities, including a small number of our iconic hand-made ceramic bottles by and 50cl bottles with an ever bright and radiant label designed by the late Baris Baykul Yilmaz.

To understand the essence of Audemus, we return to its origins: the quiet hamlet of La Barde, where our very first distillery was born. It was here that Hélène and Thierry's story became a part of ours.

When the wonderful people behind World Martini Day got in touch a few months ago, they presented us with a task - to create the perfect gin for a Martini cocktail.... Well, according to us! We quickly got to work!

We wanted to honour our French heritage by choosing to centre our spirit around an exquisite and quintessentially French Poire Williams Eau de Vie, meticulously distilled by the Masters at Distillerie Metté ( ) in Alsace. Their pear eau-de-vie is succulent, rich, deep and intensely aromatic - and its addition to the gin immediately gives it a poetic touch.

On top of this, we layered Italian juniper, Sardinian myrtle, French citron and Indonesian cubeb to give it a generous kick. The result is a very versatile, juniper-lead, but delightfully complex gin.

Last Thursday night, our distiller, Miko had the chance to be inducted into the Gin Guild in London, joining the industry greats to be a part of this brilliant community. Being based in Cognac, France, we’re deep within a space of specialists in everything grape, wine & brandy… This is a lovely step across the bridge between the two worlds. Looking forward to the coming events!

Firstly, our gin made with visionary cheffe and her executive sommelière . This is the second recipe we’ve crafted together, featuring velvety notes of beeswax alongside vibrant blackcurrant buds and rooibos. This gin is exclusively available through our website.

Our newly wrapped Pink Pepper Gin has officially landed and is now available to order. As well as the two classics, our savoury Umami Gin, made with Sicilian capers and rested in a used-cognac barrel. Finally the sumptuous delight of Covert Fig Leaf Liqueur made roasted fig leaves, cognac and distilled honey.
