Managing the fermentations is one of the winemaker’s most critical tasks. F**k up fermentation and yer hosed. (That distills a whole 12 weeks of UC Davis winemaker cert class into one easy-to-remember layman’s term. You all owe me $2 grand.) So here Sylvain is pumping the fermenting white into a container and then pumping it back into the ovoid to introduce oxygen into the juice. Oxygen is a critical nutrient for yeast and enables them to convert the sugar into alcohol and CO2.

There is quite a bit of juggling in winemaking and our winemaker Sylvain Vatel is on top of it all. We have 40+ barrels to keep an eye on, we need to plan for and manage the harvest and stay on top the the weather, ensure that we have all the necessary equipment and then pray for an easy fermentation. Still love it though.
