Big thanks Jean-Marc Vilboux for passing by with your 2025 w**es yesterday — all fresh, supple, round and delicious with hidden depths !

Starting with the new BRAISE, quite different from the 2024: a ding-dang-dong 🎶 — ’tis more light red than dark rosé, a black-grape skin-contact w**e that’s setting the tone for all the BRAISE to come.

Here’s the HOW-TO in 7 steps. Don’t try this without a grounded but luminous adult beside you. The process is simple but meticulous and demands much concentration and feeling:

1. Spend 7 years becoming a vigneron.
2. Put your vines and soils before everything else (on a see-saw with your partner and kids).
3. Harvest your much-loved Gamay. De-stem, foot-tread and after 2 days of hands-off maceration (a.k.a. infusion), take some juice from underneath and move it to another tank (the rest goes into another w**e, in this case ).
4. Harvest your perfectly ripe and pampered Négrette. De-stem, foot-tread and after 1 day of infusion, take some juice from underneath and move it into the same tank (the rest goes into another w**e, in this case ).
5. Harvest your splendid Syrah and add freshly pressed juice to the same tank.
6. After alcoholic and malolactic fermentation, move 50% of the blend into old barrels and 50% into tanks.
7. Age for 7 months, then blend all and bottle.

Result: Ding Dang D**g 🍓🌶️

Strawberry & raspberry notes channelled by the Gamay. Sexy spice from the Négrette and Syrah. Barely-there-but-just-enough-to-do-the-job tannins. Fresh, invigorating acidity, softened by the roundness of the fruit — enough structure and grip to keep you dancing well beyond the first sip. 💃

And I was panicking ! 🫪

Had some wonderful customers from Berlin in the cellar and they bought (among other beauties) a bottle of this Jurançon Sec 2022 by in Jurançon — 80% Petit Manseng, 20% Gros Manseng, aged on the lees in oak barrels.

One of my last 4 bottles, that had been standing up on the shelf since Christmas (should have been lying down). Anyway, it had gone through a weird, flat phase, like it was hiding — so I hadn’t been pushing it forward.

But these clients were intrigued by its profile and bought it… so I had to re-test!

I cooked for Denis, presented everything beautifully and he was very happy, but the tension Japan–Brazil ⚽️took precedence… so I took myself off to taste for myself.

Amazing what joy you can have just with you, outside, and a w**e like this ⚡️Forget “time and tide waits for no one”… Take the time. Evolution is the maître-mot ✨

So happy these two Berliners will get to share this experience..and that my cellar in the stables beneath the house “sait gérer”!

Lessons in expressivity 🧡

We met at .salon in Toulouse back in November, and I went to visit her in Bordeaux — which is geographically, if not technically, part of the Southwest w**e region, but that’s another story 🤪

I brought 4 of her w**es back to the shop because each one has a special touch - and I’ve just been back, because her luminous orange w**e has been selected for the tastings .chateau this summer 🎉 - fresh orange blossom and grapefruit notes, voluminous and vibrant, seriously tasty and pure - can’t wait to share!

Just landed in Liverpool **es - Le Vent des Jours from Cahors 💨 💜

C’JUSTE 2024
Golden liquid with notes of citrus pulp and tropical fruit, an expansive mouthfeel and electric tension. 70% Gros Manseng, 30% Ugni Blanc. Direct press, maceration on the lees, aged in amphores on fine lees for 7 months.

LE ZEF 2022
A blast of blackberries and raspberries with hints of violets, rosemary and thyme. A generous, sensual, super-fresh 100% Merlot to enjoy from drinks to dessert. Whole bunches, short carbo-maceration, aged in concrete tanks and oak foudres for 9 months.

LES CALADES 2022
A bed of black fruit and purple petals. Powdery and smooth on the approach, followed by bright bramble flavours that keep you on the edge of your glass. Deep yet lifted with a saline finish. Malbec grapes from 3 different plots (jurassic limestone, kimmeridian limestone and limestone streaked with red clay). Destemmed, macerated separately f in concrete tanks for 3 weeks. Free-run and pressed juice blended in layers and then aged in concrete tanks (30%) and amphores (50%) for 8 months. Yum.

Q. Why has Lolo planted all these new grape varieties around his 40-year old Malbec, Merlot, Jurançon Noir & white varieties (Gros Manseng and Ugni Blanc)?
A. Why not❓

A. ❤️

Q. Wasn’t he scared to plant varieties like that in the face of climate change?
A. No. He’s not scared of anything 💪 : “if it works, it works..and frankly, of all the varieties I’ve planted, the Pinots have taken the best, they look two years older than the rest”. First harvest coming up in 2026 🍷😀

Q. What may be the secret of their deliciousness ?
A. Clay-limestone. 330m. South-facing.
