Le Domaine de Matourne, qui produit des vins AOC Côtes de Provence et est situé à 4 km au Nord de Flayosc (Var) et à 9 km à l'Ouest de Draguignan, a été développé par Jurgen Spaethe et planté en vignes depuis 1974 en cépages nobles de de l'Appellation Côtes de Provence Contrôlée: Cabernet Sauvignon, Syrah, Grenache, Mourvèdre, Cinsault, Rolle (Vermentin
o Bianco) et Sémillon. Le Rouge est dominant avec 80% de la production, suivi du Rosé (10 à 15%) et du Blanc (5 à 10%). Le Domaine est situé à une altitude de 500 m, dans l'arrière-pays du Var, avec un sol profond argilo-calcaire-siliceux, ce qui permet une maturation lente en fin de saison (journées chaudes et nuits fraiches), avec des vendanges tardives. Les vignes sont traitées en désherbage mécanique, avec des engrais naturels tous les deux ans, résultant en de rendements faibles (30 à 40 hl/hectare). Domaine de Matourne produces Côtes de Provence AOC wines only and is located 4 km north of Flayosc (Var) and 9 km west of Draguignan. Planting of vines started in 1974, with the latest plantings realised in 2000. The varieties comprise Cabernet Sauvignon, Syrah, Grenache, Mourvèdre for the Reds, Rolle (Vermentino Bianco) and Sémillon for the Whites, whereas the Rosé is made with Grenache, Mourvèdre and Cinsault. The Reds dominate with around 80% of total production, followed by the Rosé (10 to 15%) and the White (5 to 10%). The Domaine is at an altitude of 500 m, located in the Var hinterland, with a deep clay, argile and silicon soil, allowing a slow ripening and picking of the grapes late in the season, with warm days and cool nights. Weeds are removed mechanically and the vines are fertilized every two years only, resulting in low productivity. The winery, built in 1981, allows for a modern vinification: introduction of the hand picked grapes in 40 kg containers by gravity into the fermentation tanks, slow maceration and fermentation in stainless steel. In addition to its fruity and and elegant Rosés and Whites, Matourne has made its reputation with its powerful Reds that age well during 5 to 10 years. The Reds of the Cuvées, dominated by Cabernet Sauvignon, Syrah or Mouvèdre, are aged in French oak barrels, whereas the generic Reds are aged in stainless steel, as are the Rosés and the Whites. Die 1981 gebaute Kelterei erlaubt eine optimale Herstellung: Eingabe der handgepflückten Ernte in 40 kg-Containern durch Gravität, Mazeration und Vergärung in Edelstahl-Tanks sowie für die Rotweine einen Ausbau in Eichenfässern. Die Weiss- und Rosé-Weine sind trocken, jedoch fruchtig und elegant, während Matourne seinen Ruf mit seinen kraftvollen, lagerfähigen Rotweinen erworben hat. Die Rotweine der Cuvées werden hauptsächlich mit Cabernet Sauvignon, Syrah und Mourvèdre erzeugt. Verkostung und Verkauf jeder Tag der Woche von 9 bis 19 Uhr.
