We are back for another week and as usual, we are starting by cooking a fresh batch of pies 😊

Our steak, steak and kidney, chicken & mushroom and minced beef & onion pies, along with sausage rolls and cheese and onion pasties have just come out the oven and straight into the fridge to cool down go go into the self service fridges this afternoon.

Our pork pies are just going in to the oven then will cool down ready to be jellied tomorrow morning.

The water is boiling for the eggs so I can get some scotch eggs made this afternoon.

We have some lovely Angus Picanha now in stock 😊 32€/kg

Pichana is the top rump cap. It has a layer of fat on the top which should be kept on during cooking to get the best flavour and keep it nice and juicy !

Because it isn't an overused muscle, it is tender and perfect for high-heat searing.

Filet mignon - Chinese style !

Last night I had no inspiration for dinner so I found a few recipes online and made my own version :

Marinaded filet mignon (leave for a couple of hours) :
Honey
Light soy sauce
Dark soy sauce
Drizzle of sesame oil
Salt
Pepper
Cayenne pepper
Chopped garlic

Sliced onions and green bell peppers in a dish with a little olive oil, the filet mignons placed on top. Pour over the rest of the marinade sauce.

180° for about 45 minutes (depending on your oven)

Sprinkle of sesame seeds on top

Our filet mignons are still on offer this week if you fancy a try 😉
