Empanadas and Syrah. Not a French pairing — a very good one. 🍷🥟

Pastry, a savoury filling, fat and salt. That asks for a red with grip, and Syrah brings exactly the right amount: blackberry and cassis, tannins already soft, a mineral finish that resets the palate between two bites. Enough structure to meet the pastry, never enough to flatten it.

That's what 58 grape varieties are for: whatever ends up on the board, the South has a bottle for it. Want it lighter? Cinsault. Rounder? Merlot.

And this bottle has a story. "Jaja" is French for the everyday wine, the one nobody makes a speech about, but seats everyone around the table — and Le Château De Jau put that word on the label, then had it drawn by the artist who signed simply: Ben. The same estate has run a contemporary art gallery in a former silkworm factory since 1977.
