Two images, one season.

Between the rows at Château de Jau, poppies spill across the soil — a burst of red that signals a living, breathing vineyard, where biodiversity is left to do its work.
And on the vines of Domaine des Lauriers, tiny green berries catch the last of the evening sun. This is fruit set: the fragile, decisive moment when flowers become the grapes of the coming harvest.

No rush. Just nature, quietly setting the table for the months ahead.

Pays d'Oc IGP — most estates count their history in generations. This one counts in geological eras. 🌿🦕
Meet Domaine de Font-Mars (Domaine Font-Mars).

Just outside Mèze, on the shores of the Thau lagoon, the vines grow over something extraordinary: soil that still holds fossilised dinosaur eggs. A quiet reminder of just how deep this terroir's story runs.

The estate has been tended since 1864, passed down through the de Vulliod family and into the hands of the de Clock family — winegrowers since their Dutch ancestor settled in Bordeaux in 1679. Today Jean-Baptiste de Clock works 55 hectares in a single stretch, across three distinct soils shaped by the sea.

That patchwork becomes freedom in their Pays d'Oc IGP range — a bright Viognier, a deep Malbec, a Cabernet Sauvignon, the Clémence rosé, and a red they fittingly named Dragon. Each one carrying the salt, the sun, and the deep time beneath the rows.

Some terroirs are old. This one is prehistoric.

Sunglasses on, towel down, a bowl of berries within reach. This is exactly the kind of afternoon a chilled rosé was made for.

Belles du Sud by Domaines Auriol — a delicate rosé gris of Cinsault and Grenache Gris. Pale salmon, barely there, with bright notes of citrus and pink grapefruit and a feather-light 10% vol. Fresh, easy, made for slowing down.
A playful collaboration with Nach Bijoux , dressed in flowers and southern sun.
Apéro, berries, good company. Summer doesn't ask for much.

Pays d'Oc IGP — Meet the Rambier family. 🌿🍷
Same family, same soil, since 1848.

For five generations, they've worked the same stony, sun-baked slopes at the foot of the Pic Saint-Loup, near Montpellier — handing down the land, the patience, and a restless drive to keep getting better.

Their home estate, Haut-Lirou Pic Saint Loup, sits deep in the garrigue, where poor caillouteux soils and wide day-to-night temperature swings give the wines their freshness and tension.

Among their cuvées, the Pays d'Oc IGP range lets single grape varieties speak — a pure Chardonnay, a pure Viognier, a pure Syrah... each one bright, expressive, shaped entirely by this rugged southern terroir.

Nearly two centuries in. Still going.

Ébourgeonnage. Disbudding.
One of the most patient jobs of the spring: going through the rows by hand, removing the extra shoots one by one, so the vine can focus its energy on the buds that count.

No machine does this. Just eyes, hands, and the grower's judgement — repeated vine after vine, row after row.

It's this quiet, careful work, multiplied across every cépage of the South, that lays the groundwork for the diversity Pays d'Oc IGP is known for.

Pays d'Oc IGP — Forty years ago, a vigneron made a bet no one else dared. 🍷🌿

Welcome to Domaine La Provenquiere in Capestang in the Hérault, a few kilometres from the Canal du Midi.

Some forty years ago, Max Robert did something almost no one was doing in the Languedoc: he planted Sémillon. A grape born in Bordeaux, far from its usual terroir, on the sun-baked slopes near the canal.

Today, the family — now in its third and fourth generations — remains one of the rare producers still cultivating Sémillon in Pays d'Oc IGP. A bold choice. A patient one. And one that defines the spirit of the estate.

Claude, Brigitte and the next generation — Marie, Jean and Antoine — craft wines in four colours: white, rosé, red, and even orange. All rooted in the same idea: explore freely, with deep respect for the land.

The South, told in 20 grape varieties.

In the South, May is planting season. And for some vignerons, every cutting is a question of precision.

Which grape variety, for which soil? Which exposure, for which future climate? Which parcel deserves what?

It's not just farming — it's tailoring. A long, attentive practice that quietly shapes the wines we'll be drinking in five, ten, twenty years.

The South is rooted in tradition. And it never stops planting forward.
