🍇 Pays d'Oc IGP is the first French wine denomination renowned for its 58 grape varieties in the heart of Languedoc-Roussillon.

Empanadas and Syrah. Not a French pairing — a very good one. 🍷🥟

Pastry, a savoury filling, fat and salt. That asks for a red with grip, and Syrah brings exactly the right amount: blackberry and cassis, tannins already soft, a mineral finish that resets the palate between two bites. Enough structure to meet the pastry, never enough to flatten it.

That's what 58 grape varieties are for: whatever ends up on the board, the South has a bottle for it. Want it lighter? Cinsault. Rounder? Merlot.
ㅤ
And this bottle has a story. "Jaja" is French for the everyday wine, the one nobody makes a speech about, but seats everyone around the table — and Le Château De Jau put that word on the label, then had it drawn by the artist who signed simply: Ben. The same estate has run a contemporary art gallery in a former silkworm factory since 1977.

The harvest doesn't wait for daylight. 🍇☀️

Across Pays d'Oc IGP, like here at Domaine.fr.le.fort, a good part of the picking happens at night, or in the dark before sunrise — before the heat gets into the fruit.

Cooler grapes reach the cellar in better shape. So the lights go on in the rows, and the press is already turning while it's still dark outside.

Everyone pictures harvest in the sun. A lot of it happens in the dark.

Pays d'Oc IGP — Domaines Paul Mas : come for a tasting, leave tomorrow morning. 🍷

At Montagnac, Côté Mas is built to keep you. A buggy takes you out into the vines, or a horse-drawn carriage if you'd rather go at walking pace. A pool. A long lunch. And a room at La Maison Nicole for the evening that runs late.

Then the table fills up, and every bottle on it is Pays d'Oc IGP. From Côté Mas: "Rosé Aurore" — Grenache, Cinsault, Syrah — then a Syrah-Grenache, and a Sauvignon-Vermentino. From "Vignes de Nicole": a Chardonnay-Viognier for the white, and a Cabernet Sauvignon-Syrah for the red, eight months in oak. Five bottles, eight grapes, one long afternoon.

Jean-Claude Mas has a name for all this: "Luxe Rural." Rural luxury. Two words that shouldn't fit together, until you've spent that afternoon there.

Late August, and nobody's ready to call it yet. So take the table outside while it lasts. Feta in olive oil and thyme. Green olives and black. Warm seeded bread. Peaches and apricots split open on the cloth.

Pays d’Oc IGP — six cocktails, one summer. Here’s the last one. 🍹

Merlot over ice, sparkling water, and a line of passion fruit. The Merlot Passion closes the series the way it opened — a southern grape, almost no effort, and a glass that doesn’t last long.

In the glass (25cl): 12cl Merlot Pays d’Oc IGP · 8cl sparkling water · 1.5cl passion fruit syrup. Two or three ice cubes, then the syrup, the wine, and the sparkling water last. Works just as well with a Pinot Noir Pays d’Oc IGP.

Pays d'Oc IGP — Château de Figuières - same two grapes, opposite directions. 🍇

Both their Pays d'Oc IGP whites are built from Viognier and Roussanne — and that's where it gets interesting. "Tempus Blanc" leads with the Viognier. "Impetus Blanc" turns it around and leads with the Roussanne. Same hill, same pair, two different bottles.

There's more planted up there — Bourboulenc, Marsanne, Piquepoul — because the hill can take it: the La Clape massif, a wall of white rock a few kilometres from the Narbonne coast, garrigue and pine, a protected Natura 2000 site wrapped right around the vines.

Guided tours on request, twelve people maximum, in English or Spanish. You get the vines, and someone who actually works them.

A bit of history, quickly: for decades these slopes were sheep pasture. Somebody replanted them. Stand up there and you'll understand why.

The grill is on. Put the rosé down. 🔥🥩🍷

Long table, old stone wall, everyone reaching at once: coiled sausage straight off the fire, pasta salad with tomatoes and olives, tapenade toasts, far too much bread.

Grilled food — smoke, char, fat, salt — asks for a red with grip. And Merlot has a reputation for playing it safe: nobody told the ones down here. Under a southern sun it ripens plush and dark, with black fruit, soft edges and just enough backbone to stand up to a sausage off the coals.

The trick is temperature. Twenty minutes in the cooler and it arrives cool rather than warm — suddenly it's a summer wine.

It doesn't stop at the grill either: grilled peppers and aubergine, a tomato pasta salad, a wedge of hard sheep's cheese. Want it lighter? Reach for Cinsault or Grenache. Spicier? Syrah. With 58 grape varieties in play there's no single right answer — only your table.

Harvest 2026 has started — and the whites go first. 🍇

Across Pays d'Oc IGP, the first crates are coming in. Whites lead the way: picked early, while the grapes still hold the acidity that keeps a wine lively. Linger too long in a southern August and that freshness is gone.

Some rows are picked by hand — secateurs, a bucket, bunch by bunch. Others by machine, working through the cool hours when the fruit comes in at its best. Same goal, different tools.

Then straight to the cellar, before the day warms up.

Weeks of this ahead. The reds are next.

Pays d'Oc IGP — the grape list here reads like a passport. 🍇

Albariño from Galicia. Petit Manseng from the Pyrenean foothills. Riesling. Petit Verdot. All of them growing at Florensac, ten kilometres from the Mediterranean.

Behind a façade shaded by plane trees, the cellar keeps its steel vats under a great exposed timber frame. The cuvée names carry the same spirit: Chouka Pink, ALF'Red, Barri White — and one simply called Boisrond.

Say hello to Domaine de Valensac, .de.valensac — 49 hectares belonging to the Mention family, run since 2004 by Edwige Thuillé. Everything here is Pays d'Oc IGP.

Nearly half the estate is Chardonnay. The rest doesn't always stay where you'd expect.

Pays d’Oc IGP — the best sushi table has no table. 🍣

A blanket in the grass, a tray of sushi, wakame, edamame and a little bowl of soy. Chopsticks, bare feet, no ceremony.
The wine? A Viognier — and that’s the good surprise. Its apricot and white-flower lift meets raw salmon head-on, and its rounder texture cools the salt of the soy, where a leaner, sharper white would simply vanish.

That’s the beauty of 58 grape varieties: whatever lands on the blanket, the South has a bottle for it.
In the glass: Gayda Sphère Viognier by - a Pays d’Oc IGP white made for exactly this kind of afternoon.
Chill it well. Bring extra ginger. 🌿
