It’s been 10 years since I moved to Paris, studied, worked, teached, wrote 2 books, collaborated and developed to the pastry chef that I am today, and I feel like this is the perfect time to share with you what the future holds and why I have been so quiet lately. In approximately two months, I will open my vision of a pâtisserie, and I am super excited to share it with you, and until then I promise to keep you updated and tell you more about the birth of this incredible baby.

I know it’s hard to believe but this is actually an ice cream dessert! I took this photo this weekend at the salon, in the world championship of patisserie this is the italien team “da Vinci code” creation and wait for the next video presenting all of this crazy weekend!

This must be the best collaboration ever (and also the reason my shoes don’t match the galette) this galette des rois by made with flaky puff pastry and filled with almond frangipan is made in collaboration with and that means you can find 1 of 5 different mini ceramic shoes (just like mine) inside of it. Notice even the crown has shoes on it! Now that’s a desserted favorite!
