I started to learn my apprenticeship in restaurant, where they did not attach much importance to quality, so I decided that I did not want to stay there. Therefore, I applied to one oft he best hotels in my city, where I remain today.
My culinary creativity is inspired on the one hand by the very classic French, but also Austrian cuisine. I think to myself, only if you understand and master the classic craft dishes, you can use them as building block to implement these more modern and maybe better dishes. Of course, you also look at the dishes of the best chefs, which they conjure from the simplest ingredients and create world class dishes.
You want to measure yourself against other people, thats’s the most normal thing in the world. You always want to find out for yourself how good you are! I think a healthy competition is the best way to find out where you stand.

The first challenge we faced in our adventure is simple : bring our car back to Paris!
In fact, we bought it a Saturday in the very south of France and had less than 24 hours to bring it back to Paris. Our plan was simple: driving all night long. And this is what we did. We drove 18 hours without sleeping to arrive to Paris around 08:00.
As you can imagine, both of us were exhausted but optimistic about the car: it’s old but it can be driven for 18 straight hours.
Our car left the factory 50 years ago. Recently, while we were driving, we faced a breakdown: steam and oil were escaping the motor. We realized at this time that we had to check the entire engine to be sure that there will be no problems by May. Last week-end has been an important one: we went to a garage, we fixed many defects, we put some stickers and we started to build the living area in our car ! The car is not ready yet, but we are now able to sleep inside: we built a kind of foldable bed.
The next steps are :
- To fix the last engine problems: the car is currently at École Polytechnique, where Grégoire is fixing some details then travel to Lyon before the big departure .
- To spend two or three nights inside the car to be sure it’s comfortable.
- And of course, to organize the food and school supplies collect, from friends and family, that we will distribute to children
Without the ACCR, nothing would have been possible.
The car is exactly the one we need, and we feel mentally ready for the raid …
We can’t wait to start the adventure and be sure: you will receive each detail of it !

It was a dream, it became a reality: after more than a year of hard work, the Bailli Délégué of Israel and her team, with the support of the ACCR and the municipality of Tel Aviv, created a cooking school that offers a course leading to a qualification to the deprived young people.
