Mediterranean Turkey Meatball Bowl with Tzatziki

Ingredients:
For the Turkey Meatballs:
1 lb lean ground turkey
1/4 cup breadcrumbs
1 egg
2 cloves garlic, minced
1/2 tsp salt
1/2 tsp black pepper1/2 tsp dried oregano
1/2 tsp ground cumin
1 tbsp fresh parsley, chopped
1 tbsp olive oil (for cooking)
For the Tzatziki Sauce:
1/2 cup Greek yogurt
1/4 cup cucumber, grated and drained
1 clove garlic, minced
1 tosp lemon juice
1 tbsp fresh dill, chopped
1/4 tsp salt
For the Bowl:
1 cup cooked rice
1/2 cup cherry tomatoes, halved
1/2 cup cucumber, sliced
1/4 cup red onion, diced
1/4 cup bell peppers, diced
Fresh dill and black pepper for garnish
Instructions:
1. Prepare the Meatballs: In a bowl, mix ground turkey, breadcrumbs, egg, garlic, salt, pepper, oregano, cumin, and parsley until well combined.
2. Shape & Cook the Meatballs: Form the mixture into small meatballs. Heat olive oil in a skillet over medium heat and cook meatballs for 4-5 minutes per side until browned and cooked through.
3. Make the Tzatziki Sauce: In a small bowl, mix Greek yogurt, grated cucumber, garlic, lemon juice, dill, and salt. Stir until smooth.
4. Assemble the Bowl: Divide cooked rice between bowls. Top with turkey meatballs, tomatoes, cucumber, red onion, and bell peppers.
5. Add the Finishing Touches: Drizzle with tzatziki sauce and garnish with fresh dill and black pepper.
Serve immediately.
