Champagne Billecart-Salmon Le Réserve — light, precise, and built for any occasion 🥂

10 to 12 vintages blended into one. Pinot Noir, Chardonnay, and Meunier from the best sites across Champagne. Apple, crisp pear, citrus, a floral lift, and biscuity depth that rounds it all out. The champagne you reach for whether it’s opening a dinner or carrying you through the whole meal 👌🏼

What do you like to pair champagne with? 🍾

Made only in exceptional years — forty-two vintages since 1952. That’s the bar Taittinger sets for Comtes de Champagne 🥂

100% Chardonnay from the five Grand Cru villages of the Côte des Blancs, a tribute to the grape Thibault IV, Count of Champagne and King of Navarre, brought here eight centuries ago. The 2007 kept everyone guessing — a mild winter had people expecting an August harvest, then May turned awful and stalled the flowering, a cold summer dragged it out, and the sun only returned at the end of August. Picking didn’t start until August 30, and the fruit finally ripened perfectly.

Then the better part of a decade in the Gallo-Roman chalk cellars of Saint-Nicaise, 18 metres down. White blossom and Anjou pear, that lemon-and-salt tension, a crisp finish with hints of salted butter.

Blanc de Blancs or a Pinot-driven blend — which way do you lean? 🍾

Aromas of strawberry jam, vineyard peaches, and gingerbread—then a palate that goes full summer: strawberry, raspberry, blackberry in whipped cream. 👌🏼

Charles Heidsieck Rosé Réserve isn’t following the regional playbook. First-press juices only, 3–4 years of maturation when most don’t bother, 5–6% red wines vinified separately to build the structure.

The blend itself is precise: 40% Pinot Noir, 35% Chardonnay, 25% Meunier—each vinified cru by cru, varietal by varietal.

The result is that powdery pink in the glass and something genuinely full-bodied underneath it.

What’s your move with rosé champagne—aperitif or at the table? 🥂

A vintage that took its time. Cold wet winter, gray rainy spring, vines budding two weeks late. The hot dry summer that followed was the sunniest on record in Champagne — and even then, the grapes weren’t ready. September rain cleared to easterly winds, and the harvest finally came in on the 28th. A late harvest in the truest sense.

Then the bottles waited too. Eight years of élaboration before the cork came out, and you can taste why it needed time. Citrus first, then something more vegetal, then spice — eucalyptus and mint giving way to mirabelle and apricot, pepper and licorice underneath. The finish is all salinity, and it doesn’t let go.

The kind of vintage you don’t rush, and don’t forget.

What’s the most unexpected thing you’ve paired with Dom Pérignon 2013? 🥂🍾

Mild, dull and rainy — that’s how one of Champagne’s exceptional years began. 🥂

Then a beautiful summer took hold and carried everything into a perfectly mature harvest, right through the first two magnificent weeks of
September. Rare Champagne bottled that turnaround as Rare Millésime 2008.

Floral first — orange blossom, white flowers — then the fruit turns fresh and precise: tangerine, just-ripe Williams pear. The finish runs saline and iodine and holds there, perpetuating that endless spring right to the last sip.

Drink it now, or give it years to grow? 🍾

Two Dom Pérignon vintages in the same flight — and neither season could make up its mind 🥂

The 2010 Rosé came from a year that swung hard: winter frosts, the coolest start since 1996, a warm dry summer, then the equivalent of two months of rain in two days that August. Botrytis caught the Pinot Noir, and parcels had to be sorted hard. Nearly 15 years in the cellar later, it drinks less powerful than you’d expect — the power showing up as lightness. Delicate and dense at once, silky, with a suspended presence that keeps stretching out ✨

The 2015 Brut came from its own contradictions: cold spring, a long hot dry stretch through August, then brilliant sun on 7 September for harvest. Healthy, generous, balanced — and dark. Roasted and cocoa lifted by lime blossom, jasmine and peony. Broad, straight, luminously austere.

Side by side, the delicate rosé and the dark, austere brut barely read as the same house. Which one are you reaching for? 🍾

Champagne is all about celebration — but it’s more than a delicate wine. It has an aura that makes time stop. As Winston Churchill once put it: “A single glass of champagne imparts a feeling of exhilaration. The nerves are braced, the imagination is agreeably stirred, the wits become more nimble.” You feel alive, and in the moment. Cheers to life. 🥂

Same plot. Same grape. Same walls since 1698. One year between them — and they taste like two different wines.

Krug Clos du Mesnil is a single 1.84-hectare parcel of Chardonnay in Le Mesnil-sur-Oger, one of the great Chardonnay villages in Champagne. Blanc de blancs from one walled plot, bottled only in the years that earn it. The first was 1979. The 2008 is the 20th release, the 2009 the 21st.

The 2008 goes citrus and chiselled — grapefruit skin, barley sugar, the menthol signature this plot leaves behind. The 2009 turns floral and round — honeysuckle, brioche, pear in syrup, held taut by a slightly spicy finish.

Nothing changed but the year. Which year would you open first? 🥂🍾

Rosé Champagne with dessert is a gamble — it turns sweet on sweet more often than not. Legras & Haas Intuition Rosé Brut didn’t. Salmon-pink, red fruit, a soft round finish that sat next to a strawberry dessert instead of drowning in it. What dessert do you prefer with rosé Champagne? 🍓🥂
