One of the greatest privileges of being a ch*****ne specialist is the opportunity to spend time with the people behind the bottles, hearing their stories, understanding their philosophies, and tasting the w**es through their eyes. 🥂🇫🇷
Today, I had the pleasure of tasting with JĂ©rĂ´me Legras of Ch*****ne Legras & Haas, whose family roots in the Grand Cru village of Chouilly stretch back to at least the 1600s.
Founded in 1991, Legras & Haas represents generations of family dedication to the land. What began with Jérôme’s grandfather acquiring vineyards has grown into an extraordinary family operation, with Jérôme now carrying that legacy forward as w**emaker.
What makes these Ch*****nes particularly fascinating is Jérôme’s approach to w**emaking. With approximately 70 individual vineyard plots, each is vinified separately to express its own character before blending. Different vessels, different approaches to malolactic fermentation, and an intimate understanding of each parcel allow him to bring out the very best in every w**e.
His Intuition cuvée is especially fittingly named. Rather than following a formula, Jérôme relies on experience, instinct, and the character of each harvest to create the final blend.
We also explored the remarkable diversity of Chouilly through his Grand Cru Ch*****nes, including w**es showcasing decades of reserve-w**e history, extended lees aging, and the distinctive chalky terroir of individual vineyards.
This is what makes Ch*****ne so extraordinary to me. Behind every bottle is a story of family, place, tradition, and the decisions of the person who made it.
And it’s precisely why I treasure the relationships we’ve built with Ch*****ne’s growers and w**emakers. These aren’t simply labels in our club, they’re people whose stories we get to know firsthand, whose w**es we experience together, and whose passion we have the privilege of sharing with our members.
More than a Ch*****ne club, Fizz is a connection to the people and places that make Ch*****ne special.
