Today we spotlight La Bretagne with a crepe recipe!
For four people you need 300g of buckwheat flour, one egg, salt, 200g of spinach, 300g of goat cheese

To prepare the dough: pour the flour and a little salt into a bowl, then add the water, stirring gradually. Beat the egg, add it and leave to rest for an hour.

Cook the spinach in a pan in a little salted butter and add the goat's cheese.

To make the pancakes, make sure the pan is hot, grease it with a little butter and gently spread the batter with a ladle. When the crepe is cooked, add the spinach and cheese!

A simple and tasty recipe that will make you travel !

Vegetarian Chili (for four persons)
Ingredients :
Chili spices (chili peppers)
100g of cheddar
1 can of corn
400g of red beans
800g of peel tomatoes
2 carrots
1 onions
2 courgettes
2 garlic cloves

Preparation:
Heat the oil in a skillet. Slice onions and garlics and put it in the skillet.
Add salt and pepper.
Slice courgettes and carrots in sticks and put them in the skillet. Let set for 8 minutes.
Then, put chili spices on and add peel tomatoes, drained corn and red beans.
Put a little glass of water in the skillet, mix and let’s cook for 10 minutes
Once it’s ready, you can serve your chili in a plate and put some cheddar on it.

(Tips: If you’re a good eater, you can cook some rice in addition)

Here’s an easy recipe to cook for a little cost with pasta and vegetables. You can improvise this recipe to your taste by choosing your favorite vegetables.
Farandole of pasta and vegetables (for four persons)

Ingredients:
800 g of pasta of your choice (200g per persons)
2 courgettes
1 carrot
1 or 2 onions (yellow or red)
2 peppers
5 tomatoes
Goat’s cheese OR Raclette cheese OR Parmesan cheese

Preparation:
Slice the onions, the carrot, the courgettes and the peppers in little pieces.
Heat some olive oil in a large skillet and put on your vegetables. Let return it for 15 minutes.
In another time, boil a pot of water. Slice the top of tomatoes and cut a cross on it. Put the tomatoes on the pot for 30 seconds, then remove them and immerse them in cold water. Now you can peel your tomatoes easily. After that, slice the tomatoes to remove the heart and slice the tomatoes.
Heat some olive oil in a skillet and put your tomatoes in. Let set in for 15 minutes.
You can start to heat the water for pastas during this time.
When the tomatoes are well melt, remove it on the skillet with the other vegetables. Let set for 15 minutes. You can begin to cook the pastas at the same time.
When the pastas are cooked, drain them and serve them in a plate and put your vegetables and the cheese on it.

Want to treat yourself while respecting the environment? Follow chef Judah Nanas' delicious 10 cheese pizza recipe.
Ingredient :
- Pizza buitoni 4 cheese.
- Goat Cheese
- St nectaire Cheese
- Etorki Cheese
- St Felicien cheese
- Fresh cheese
- Brie
- Cabecou
- Parmigiano
- Cow cheese
- Lou Perac
- One Ognion

Preheat your oven to 200°C. Slice or dice the onions. Cook them in olive oil. The onions are ready when they have a slightly caramelized appearance.
Meanwhile, cut all your cheeses into small pieces. Start by putting the most melting cheeses on the pizza by spreading well (St Felicien, fresh cheese, Lou perac etc.).
Finish with the hardest cheeses. Putting as much as possible until there is no more room. The size of the pizza and your appetite are your only limits.

Cook until the cheese begins to flow out of the pizza.

Let's revisit a winter classic. If for you raclette rhymes with cold cuts, we will see that you can do without them. In the Middle Ages, raclette was eaten without meat. It was a way for the Swiss shepherds and farmers to warm up during the meal. The surface of a piece of cheese was just heated up and put on some potatoes.
Today we are going to use raclette to cook vegetarian sandwiches. It's a simple dish, very good and not expensive at all, which will suit you very well, little student from Rennes.
Cut a baguette in two so that you have two nice slices of bread. Cut thin slices of white onion. Caramelize the onions and add the raclette cheese to the pan. Wait for the cheese to become runny. In the meantime, cut the shallot into fine cubes. With a vegetable grater or a peeler, make very thin slices of carrot.
Spread the melted cheese and onions on the toast and add the diced shallots and carrots.
And here is the raclette 2.0 is born
For a friendly raclette it is also possible to replace the cold cuts by the raw vegetables of your choice and to heat them with the cheese, it is just as delicious and it adds freshness and crunch to each caquelon

A good vegetarian dish is even better when the ingredients used come from places we know. For the products used for the courses, The Rennes of Cooking try to value the regional circuit by using a maximum of Breton ingredients. We are therefore proud to announce our first two sponsors.
The vegetable producers of the Carotte Sauvage and the farm of Douarou Koad Kimerc'h, both located in Finistère will provide us respectively with fruits, vegetables, herbs, cheese and milk.
We are looking forward to creating incredible recipes with these organic and environmentally friendly products.

Good news for the apprentice cooks!
We have received the support of the Crous de Bretagne for the organization of the courses! So it is in the UR l'Etoile of the Beaulieu campus that we will be waiting for you to prepare vegetarian recipes together! There will even be a chef from the restaurant to help us with the cooking equipment, as well as a dietician who will give us advice on how to concoct the healthiest recipes! Classes will be held on Tuesday or Wednesday at 5:30 pm. Of course, we will stay together afterwards for the meal to taste our creations! We will send you the registration schedule very soon!
